Brie is somewhat delicate and goes better with fruit than herbs, in my opinion. A really nice way to present it is baked in a puff paste crust and served with fruit preserves or conserve. Apricot seems to go very well with the flavor of brie.
If you do use herbs, be very, very sparing with them so you don't lose the brie characteristic flavor.

Sweet fruits such as figs, dates, and pears go very well with brie.
A dessert wine goes nicely with it as well.
An Inniskillin Riesling Ice Dessert Wine or “Nivole” Moscato d’Asti will do wonders.
When thinking of what spices to use, think of dessert spices you like...cinnamon, all spice, and nutmeg...you might also like to try sweet tastes with the brie...brown sugar, honey, and marmalade.

I don't know about you, but I take caraway seed, crush it up and sprinkle it on the fleshy side of the cheese...delicious!

the delicate and fruity spices and herbs work best----dill, fennel, carraway, anise or try the warm fruity spices----cinnamon, nutmeg, allspice, use sparingly:cloves or mace
