I'm looking for a good, simple and quick recipe for cornish hens. I have to work on Thanksgiving but would like to make a decent dinner after work. Thank you and Happy Thanksgiving!!!

Baked Cornish Game Hens


Ingredients

6 whole cornish game hens or what you have
1 md onion -- chopped
1 celery stalks -- chopped
1/2 green peppers -- chopped
8 oz mushrooms -- chopped
1 whole garlic clove - minced
2 tb fresh basil -- minced
1 ts oregano
2 tb fresh parsley
3/4 c butter -- melted

Instructions

Stir 1/2 cup melted butter with onion, celery, green pepper,
mushrooms, garlic, and herbs. Season hens inside and out with salt and pepper. Stuff bird with equal amounts of the vegetable mix. Place birds in baking dish, breast side up. Drizzle with remaining 1/4 cup butter. Cover and bake 1-1/2 hours at 325 degrees. Brown at 500 degrees.

wash hens and rub inside and out with head of garlic chopped in half - salt and pepper - place half of the half of garlic inside the hens along with a sliver of onion - rub with butter softned or olive oil

Pineapple juice from a can of crushed pineapple and a tablespoon of soy sauce - baste the hens and bake at 300 for about an hour do not cover first half hour - then cover second half hour

Drain juices and make gravy

Serve with rice pilaf brown a cup of basmati rice with a chopped onion. Add the pineapple juice and chicken stock to make 2 cups. Boil cover and put heat on lowest possible setting - then cook for 25 mins. Toss with butter and parsley

Here's easy. Rub the bird(s) down with olive oil while you melt some butter with garlic in the microwave. Season the inside with salt and pepper. Rub the butter all over the bird, squeeze the juice of a lemon over it all and shove the rinds inside the bird with some rosemary and sage. Bake as normal.

I love this method.
