So the juices can congeal and stay in the meat,rees plus there is a carry over of temp to 10 deg

If you carve it right out of the oven it lets all the juices run out. If you let it settle the juices distribute and the turkey is moist all the way through.

It needs to rest so the juices stay in. If you cut into it right out of the oven the juices will run all over the place. And it continues to cook for a bit even after it's out of the oven.
