I have collected a few sloes, not many, someone had been there before me.

Looking for the gin bottle. Is it too late for Christmas? I am looking for experience rather than recipes which I can look up myself. It is syrupy or like gin, the final product? Sweet or sour?

Ingredients specs:

Sloes collected 9.5 oz = 270 g
Ample vodka and some gin in the cupboard.


Web site recipes:

Sloes for 425 ml gin or vodka
210 g of granulated sugar

or

500 ml gin
150 g sugar (BBC for 300 g of sloes)

The end result is great .It's not syrupy like a liqueur or bitter like gin but just that perfect in the middle taste.Might just be ready in time if yo make it now.If you cant get sloes damsons are great too.Just prick them with a fork first.
Another great thing to do is when you have drained the fruit,melt chocolate in a baking tin and scatter the chopped fruit over it .then top with more chocolate and cool.Then slice into squares.
Its particularly good if you use milk chocolate on the bottom and dark on the top.

Rough guide - put 1 part sloes to one part gin to one part sugar in a bottle and leave for as long as you can. Shake it up every few days.

The longer you leave it the better, but if you do it now you'll have something drinkable in about 6 weeks.

It should be sweeter than gin and a dark red colour. You can always add sugar to taste at the end if you want.

As an alternative, I made raspberry gin recently. About 2 poundss rasps to a bottle of gin, no sugar at first. Left it for 4 weeks shaking regularly, then another 2 just sitting. Add sugar to the final liquid to taste. This would work with vodka too, or other fruits.

The recipe we use is one part (by volume) of sloes, one of gin, and three-quarters of sugar.

Many recipes will tell you not to pick the sloes until after the first frost. Bunging them in the freezer overnight works just as well if you don't get a frost!

Filter through clean muslin - or J cloths.

I can only reiterate what others have stated. I made a couple of bottles of sloe gin with a minimum amount of sugar, and left it in a dark cupboard for 2 years before I drank it, giving it only the occasional shake and inspection.

It was dark red, very viscous, and very pleasant, and it made me swear at my mother-in-law, which was excellent, because she was a trout.

chuck sloe's in jar top up with gin add lots of sugar liquid or syrup screw lid on and leave for a few months ................
