How do you get juice from apple slices without mashing/destroying them?

When you slice them for a pie, the juices will render when mixed with sugar and lemon juice if you use it. Even if you don't, sitting for 15 minutes or so allow the juices to come out, adn then you can thicken it if you need to with flour or cornstarch.

Soak them in a bowl with granulated sugar and some lemon juice to keep them from going brown. The sugar will cause the apple slices to render their juice.
