I've put butter pats under the skin and plan to baste it frequently after the first hour, but do I cover it in foil for the first hour?

You can to keep it from over browning but uncover it the last 45min

I always loosely tent mine until the last half hour. It's really easy to baste too instead of unwrapping the bird, and it provides more air circulation.

Yes tent it in foil, baste every hour and cook it breast down, all the juices run into the breast and it cooks in the juice and it shouldnt be dry then. Im trying that this year.

tent it until the last half hour then remove the foil for the golden brown bird!

I usually cover mine with foil for the last half of roasting, so the breast doesn't over-brown.
