The Gospels are not re-writes of Luke. Luke even starts his Gospel, "Many have undertaken to draw up an account of the things that have been fulfilled among us, just as they were handed down to us by those who from the first were eyewitnesses..." (Luke 1:1). Why would he claim eyewitnesses have already written narratives if Luke was, in fact, the first one to do so? Doesn't that seem illogical to you? And the fact that Luke didn't meet Jesus is, in a way, beneficial because he provides an investigative report - he certainly went around asking people what happened and thus Luke acts as a historian. Regardless, if you accept the argument that the disciples copied Luke, they still wouldn't have read Luke and said, "Oh, he says Moses and Elijah appeared to us in the clouds...... I don't remember that, but since this Luke guy says it, I'll write it anyway in my Gospel"..... Does that sound logical to you?
