Southwestern Cornbread Dressing


Ingredients:
5 cups cornbread, coarsely crumbled

4 English muffins, coarsely crumbled

3 mild green chilies, roasted, peeled, seeded and chopped

1 red bell pepper, roasted, peeled, seeded and chopped

3/4 cup pine nuts, toasted

1 tablespoon chopped fresh cilantro

1 tablespoon chopped fresh parsley

1-1/2 teaspoons chopped fresh basil

1-1/2 teaspoons chopped fresh thyme

1-1/2 teaspoons chopped fresh oregano

1 pound Italian turkey sausage

3 cups chopped celery

1 cup chopped onion

2 to 4 tablespoons turkey broth or water
Preparation:

In large bowl combine cornbread, muffins, chilies, red pepper, pine nuts, cilantro, parsley, basil, thyme and oregano; set aside.

In large skillet over medium-high heat, sauté turkey sausage, celery and onion 8 to 10 minutes or until sausage is no longer pink and vegetables are tender.

Combine turkey sausage mixture with cornbread mixture. Add broth or water if mixture is too dry; set aside.

I like Leef's answer. I'm sure it'll be OK though. I like mine with apples, onions, sage and sometimes I add a little crumbled cooked Italian sausage. But the main thing is that some people prefer their stuffing on the dry side, some like it moister. If you know yout mother-in-law's preference on that question, you're halfway there.

(P.S: if you can beg, borrow or steal some genuine homemade turkey stock to make it with, your stuffing is guaranteed to be fantastic, no matter what you flavor it with. But don't stress too much--it'll turn out fine! Have a happy and relaxed Thanksgiving.)

Cube up a loaf of French bread and lightly toast it in the oven. Saute chopped red onion, garlic, celery, and mushrooms in a stick of butter. Add dried sage and maybe rosemary, salt and pepper. When that's cooked down, add chopped fresh sage. Toss with the bread cubes, drizzle with 1-3 cups of chicken broth depending on the consistency you like (dry/crunchy to mushy). Put it in a sprayed pan and bake until heated through.

I love this because it's simple and authentic.

Buy some seasoned croutons and add some cooked celery, onion and spices. mainly sage. Or buy a couple boxes of stove top and have it made before she gets there and hide the boxes. Good Luck and have a Happy.
