Except may be in a hair salon, mousse are served chilled or frozen. Most common forms are mousse cakes or torts. Souffle is either hot or frozen although the two versions bare no resemblence to each other at all really.
The closest it get is when you compare a frozen mousse to a frozen souffle.
In general, I think of gelatine with mousse and egg whites with souffle.

MOUSSE NOUN: 1. Any of various chilled desserts made with flavored whipped cream, gelatin, and eggs: chocolate mousse.

SOUFFLE NOUN: A light, fluffy baked dish made with egg yolks and beaten egg whites combined with various other ingredients and served as a main dish or sweetened as a dessert.

The difference: souffle is made with beaten egg whites and when it comes out of the oven, a soufflé is generally very large and fluffy, and will "fall" after 20 or 30 minutes.

Souffle is cooked, Mousse is usually not.
Souffle will colapse. Mousse will usually hold its form, if enough gelatine or aspic has been added and you fold the ingredients in gently) Souffle is usually served hot, mousse - cold.
