Do you know the recipie for original italian spaggeti carbonara?

Cook your spaghetti in boiling, salted water with a little olive oil, until it's "al dente"...
While the spaghetti is cooking prepare the carbonara sauce:
(this is for four servings)
4 ounces diced bacon
2 raw eggs
pinch of salt
pepper to taste (I like the fresh ground mixed peppercorns: black, white, pink and green)
1/2 cup grated parmesan cheese
2 or 3 tablespoons of fresh cream (optional)
Sautée the bacon until it is about crisp. Reserve in pan
Beat the 2 eggs until very frothy, add the parmesan, salt and pepper and beat until well mixed

Drain the spaghetti and return to pot, add the bacon (with the drippings) and stir to mix. now add the frothy egg/cheese mixture and stir quickly to mix as well as possible,. If you find it a bit too dry add the tablespoons of fresh cream, stir a little more and serve immediately.

Excellent with garlic bread.

Hmm...if I recall that just takes cooked bacon, a raw egg and parmesan cheese..but if you don't like the sound of that substitute olive oil for egg...I like to slowly simmer some garlic with the bacon too for flavour.

Boil the pasta, drain, then drop the ingredients in...as much as you like but only one egg if you're going to use it (drop into HOT pasta...it cooks the egg). I like adding shrimp on occasion too. Ok so now it's not the same recipe but still...*S*

The recipes with the egg and bacon are correct. However, you should use only the egg yolk and the bacon must be smoked bacon.

abuela nany is right!!! but it must be used smoked bacon (in italy is used pancetta...i dn't know if is exactly the same...)...
i'm italian
