flan,, my all time favorite (not just Cuban tho)...
Cuban Flan (custard) recipe
1 1/2 cups of sugar 6 egg yolks
2 Cups of milk 3 egg whites
1 tsp vanilla 1 lemon peel
1/4 tsp salt 1 cinnamon stick
1/4 cup water
Prepare a caramel by adding the 1/4 cup of water to 3/4 cups of sugar in a small saucepan over medium to low heat. Stir while cooking until the sugar starts melting. Let it simmer. Use a pastry brush dipped in water to wash the sides of the pan free of granular sugar. When sugar starts to thicken and turn brown remove from heat and add 2 cubes of ice to stop the cooking process, being very careful not to get burned with any splattering that may occur. Coat a warm baking dish or round mold by pouring the caramel and swirl it around the sides and bottom. put the coated mold aside( By the way the mold should be 9 inches in diameter).
In a saucepan bring to a boil the milk with the lemon peel, cinnamon stick and salt. When the mixtures starts to boil remove from heat and let it cool a little bit.
In a medium bowl beat lightly the egg yolks, whites, vanilla and sugar until well mixed.
Pour into the bowl the slightly cooled milk and strain the egg and milk mixture into the caramel coated mold.
Place the flan mold inside a baking dish filled with water up to half of the mold side
Now you have three choices of cooking it
1) Cook over stove top at low to medium flame till a toothpick inserted in the middle comes out dry
2) Bake in a preheated 350 degree oven for about an hour in the middle rack. Insert a knife or toothpick in the center, if it comes out dry remove from the oven and let it cool till warm
3) In a pressure cooker ,cook in a cup of water at 15 pounds of pressure for about 25 minutes.
When cooled place serving dish flat against top of mold and turn it upside down in a fast motion.

Arroz Con Leche (Rice Pudding) recipe
1/2 cup rice
1-1/2 cups water
1 small piece of lemon peel
1 small cinnamon stick
4 cups milk
1 cup sugar
1/4 tsp salt
1 tsp vanilla extract
Cinnamon powder
The recipe calls for washing the rice
Cook the rice in the water, lemon peel and cinnamon stick until rice is soft, about 10 minutes or so. Add the milk, salt, vanilla and sugar. Bring to just under a boil and turn down heat. Cook at medium-low heat, uncovered, until it gets thick and rice has absorbed most of the milk. Stir once in a while so it will not stick.
Fish out the cinnamon stick and pour into a bowl or several individual bowls and sprinkle with powdered cinnamon. Serves 8.
my hubby enjoys guava paste with cream cheese
Found in the store, the paste is like a marmalade/jelly in an oval can
cafe con leche custard,
Cafe Con Leche Custard recipe
Cafe con leche is the traditional "latte" that most Cubans drink for breakfast. It combines a strong espresso coffee with steamed milk and sugar. This recipes serves 4.
4 Tbsp conrstarch
3 cups milk
1 cup heavy cream
2-1/2 Tbsp instant coffee powder
1 cup sugar
2 eggs
Whipped cream
Chocolate covered espresso beans for garnish
Stir conrstarch into 1 cup milk, stirring until smooth. In top of a double boiler, pour the rest of the milk, cream,instant coffee powder, and sugar. Stir over medium-high heat until thickened. Cover and let simmer 10 minutes.
Beat the eggs well. Slowly add 1 cup of the hot coffee mixture to the eggs, beating continually.
Pour egg mixture into remaining coffee mixture in the double boiler, still over heat, and beat well to incorporate. Cover and simmer 2 minutes.
Remove from heat and pour into coffee cups. Cover with plastic wrap, leave to cool and then refrigerate. When chilled, top with fresh whipped cream and 1 chocolate covered espresso bean.
