I went out to eat the other night, and they had Greek Chicken soup on the menu, I ordered it, it was amazing. I woud love to learn how to make it. I looked up some recipies online, and they seemed rather complicated. The soup that I had tasted like condensed cream of chicken soup with some lemon juice and orzo (rice shaped pasta).

This is an easy way- serves 2
1 can (32 oz) chicken broth
1/2 cup raw rice
1 egg
juice 1 lemon
1 tablespoon chopped parsley
1/2 teaspoon chopped dill
salt to taste

Heat stock, add rice and cook 20 minutes. Whisk lemon, egg, parsley. . Blend broth/rice into egg mix. Heat 2 more minutes , stir in dill. Salt to taste.

hi im living in greece and have learnt to make the soup the proper way it takes a little time but i found a substituted for you so enjoy it

Greek Chicken and Orzo Soup

Makes four servings.

2 tablespoons olive oil
1 onion, chopped
5 cups chicken broth
1 pound boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1/2 cup orzo
2 eggs
3 tablespoons lemon juice
directions
In a large soup pot or Dutch oven, heat the oil over medium heat. Add the onion and cook, stirring three to five minutes or until it starts to turn lightly brown. Add the broth, chicken and orzo. Bring to a boil, reduce heat to low and cook, covered, for five minutes, or until chicken is cooked through.

In a small bowl, lightly beat the eggs. Add the lemon juice. Stir about 2 tablespoons of the hot broth into the egg mixture to temper it. Gradually add the egg mixture into the soup, stirring constantly. Do not boil.

MOST IMPORTANT THE FOLLOWING ARE NOT MENTIONED IN THE RECIPE SO TAKE CARE.
when adding the lemon and egg mixture DO NOT BOIL IT. remove the boiling pot of soup from the stove before addding the egg lemon mixture and then swirl the pot around to combine the soup and lemon egg mixture together. cover with lid and leave for a few minutes. if you boil it the eggs will curdle and youll end up with a mess.
SPECIAL TIP i add 1teaspoon of corn flour to the egg lemon mixture for a thicker soup.

Take a regular can of chicken soup, add fresh lemon juice and garnish with chopped feta cheese and freshly chopped oregano.

Pour over hen. decrease oven to 350 levels and bake one extra 60 minutes. Baste oftentimes. Serve over rice.

I made this (the first reciepe) last night because all my food is for Thanksgiving and I didn't have anything for dinner! It's excellent. I wasn't sure how it would get creamy, but the egg must've done it. I doubled the recipe, but I think it would have been plenty for 2 + seconds without doubling.

go with Jonathan's recipe. I'm Greek and it'll give you a pretty close result to the real thing...
