A very simple and healthy way, though maybe not as much fun is
Wash them very well to remove sand
Roll several leaves into a tube shape and cut into ribbons.
Drop them in a big pot-- the water clinging to the leaves will provide enough cooking liquid. As they cook down, you can add more to the pot.

Saute some chopped onion and a clove of garlic in a little olive oil. When it's good and wilted and starting to brown, add some small pieces of ham and cook for a few more minutes. Add the washed and cut greens to the pan and stir to coat with the oil. Add a little water to the pan and put the lid on to steam. Stir occasionally and add a little more water if needed. You want the water to steam, rather than boil, the greens, so just add a little as needed.

Mixture of greens not just collard.
Clean, cut or hand break apart
Add ham hock (if you don't mind pork) or smoke turkey neck bone
Bring to a boil then simmer for about 2 hours
Salt/Pepper to taste. You can use salt pork instead of just regular salt (also depends on your feelings about pork)
I add cut hot peppers to spice them up sometimes.

The stock make the greens. I used chicken broth, onions,celery,bellpepper and season to taste
