How To Chop Garlic - Chinese Cooking Instructions Many Chinese recipes call for finely chopped garlic. This is easy to do – all you need is a sharp knife. Here's How: Lay an unpeeled garlic clove on the cutting board in front of you. Use the side of a cleaver or a chef’s knife to bang down hard and flatten the garlic clove. Peel the skin off the garlic clove. Chop the garlic into small pieces. To finely mince, press down hard again on the garlic with the flat edge of the knife or cleaver. This will flatten it and make it easier to chop. Keep pressing down on the garlic and chopping until it reaches the desired consistency. Tips: Finely cutting garlic increases its pungent flavor. Finely minced garlic will add a stronger flavor to the dish than more coarsely chopped garlic. hope this helps. good luck.

See if this look close to what you had. You can always sprinkle the final dish w/ toasted sesame seeds.

Spicy Ginger Garlic Chicken

4 cloves garlic, minced
1-1/2 tsp grated ginger (I have used powdered)
1/2 tsp salt
1/4-3/4 ground red pepper
1/4 tsp black pepper
1/4 tsp ground cinnamon
1/4 tsp ground cardamom
1 TBSP catsup
1 TBSP red wine vinegar
1 tsp water
8 skinless, boneless chicken breast halves (about 2 pounds)

In a small bowl, combime all ingredients except chicken. Mix well. Brush both sides of each chicken breast and bake uncovered in a 375° oven for 45-50 minutes or until no longer pink. Works well on the grill also.

Sorry for sticking my oar in, but garlic isn't used in traditional (or non-traditional) Japanese cooking, it's only used when preparing 'foreign' foods.

I expect your chicken was Hawaiian style..!
