I was recently given a container of homemade mole sauce which looks and smells absolutely delicious. I'll be preparing it with chicken but want an oustanding rice dish to accompany it. any ideas or links?

I think that the mole with chicken would be better with plain rice than with a spicy Mexican rice. The centerpiece of the meal seems to be your mole. It shouldn't compete with anything else that is spicy.

Go with white rice this time to let the mole show off. Save the Mexican rice for another occasion

I will tell you how to make awesome easy Spanish rice I make it all the time. Everyone I have watched that I know makes it pretty much the same way too. Perfect for mole. use a cup or two of rice and heat some vegetable oil in a pan just enough to lightly coat the rice don't walk away from it just kind of stir it around until it is a very light golden color. Then use the small can of tomato sauce it's the one that is about have the size of a standard can. Don't use paste or stewed tomatoes either just the sauce is perfect. and use the whole can then I fill the can with water usually about 4 times it just depends on how much rice your using for flavor I use garlic salt I also like adding some knorr tomato/chicken cubes the knorr seasoning is optional, but really good. then just bring it to a boil reduce heat and cover. Sometimes I slice some thin onion not purple and put it in before I cover it again it's optional make it your own and enjoy.

First, normally, mole is best eaten with just the meat and hot corn tortillas, but if you like it with rice, go for it. You might want to try plain white rice to start.

Is it black mole? Red? Green? Yellow?
Big difference. We don't eat black mole at our house. More of the Red or Green.

My husband taught me how to make mexican rice (he's from Jalisco):
Fry a cup of long grain white rice in 1/4 cup oil with about 1T chicken boullion powder. Stir constantly until light brown, then add a diced tomato, a diced jalapeno, and 1 1/2 cups water and a handful of frozen mixed veggies. Cover tightly and cook on very low heat for 15 minutes. Leave covered, turn off heat, and let stand 1/2 hour.

This rice we eat with chiles rellenos or steak and beans....I honestly don't know how it would be with mole.

beign that I am Latina I kno alot of good spanish recipes my abuelita is lookin @ this and she gave me this recip ENJOY!!!!!!!!!!!

2 tablespoons lard
1/2 cup ground pork
1/4 pound chorizo, halved lengthwise and cut into 1/4-inch pieces
1/2 cup chopped white onions
1/4 cup chopped green bell peppers
2 teaspoons minced garlic
2 cups long grain rice
1 large tomato, peeled, seeded and chopped
4 cups chicken stock, or water
3/4 teaspoon salt
1/2 teaspoon saffron
1 teaspoon chopped fresh oregano leaves
1 teaspoon chopped fresh cilantro leaves
1/4 cup chopped green onions

In a medium, heavy saucepan, heat the lard over medium-high heat. Add the pork and cook, stirring until no longer pink. Add the sausages and cook, stirring, for 1 minute. Add the onions and bell peppers, and cook, stirring, until soft, about 3 minutes. Add the garlic and cook for 30 seconds. Add the rice and cook, stirring, for 1 minute. Add the tomatoes and cook, stirring, for 1 minute. Add the stock, salt, and saffron, and stir well. Bring to a boil. Lower the heat to low, cover, and cook undisturbed until all the liquid is absorbed, about 20 minutes.
Remove from the heat and let sit, covered, for 10 minutes. Uncover and fluff the rice with a fork. Add the oregano and cilantro, and stir to incorporate.

Turn into a decorative bowl and garnish with the green onions. Serve immediately.

I found that the easiest way to make great Spanish rice is to take your normal steamed rice recipe and add canned diced tomatoes (not stewed tomatoes) and canned diced Ortega chiles. You will have to account for additional liquid and reduce your water by the approximate amount.

I use Doña Maria mole and add peanut butter to make it more thicker, also I add sesame seeds too.
