I make a chicken casserole which is REALLY easy, and I think great for a party. I cut up some chicken, cook it up in a fry pan, and then toss it in a big paking dish. Cover it with a can of cream of mushroom soup (you may need a few cans depending on what size batch you're making. I eyeball just about everything here, because it's all about the texture you're looking for) Then cover the entire thing with stufing, just right from a bag. Moisten the stuffing with a can of chicken stock (not too much or you'll end up with mushy stuffing) and then top it all off with a bunch of parmesan cheese. Pop the whole thing in the oven until the stuffing is done, and the cheese is melty. Only takes about 20 minutes in the oven, and people go crazy for it everywhere I've been!

How about spinach and sausage calzone?
Its a little work but really easy and really good
One pound of sweet italion sausage
One ten oz package frozen spinach, thawed and squeeze out all the liquid
1/4 lb american cheese from the deli or the dairy aisle
1/4 lb of sliced pepperoni
one lb of pizza dough, thawed.
cook the sausage like hamburger.
drain off the fat.
Spread the dough into a big rectangle a little shorter then your pan.
Along the long side of the dough, spread the sausage.
Cover the sausage with the spinach, cover the spinach with cheese slices, cover the cheese with the pepperoni.
Fold the dough over the filling and pinch closed.
Oil the pan or sprinkle it with corn meal.
Bake in a preheated oven, 375 degrees. for around 25 to 30 minutes.
This tastes great warm or at room temp. Its also good cold.

Marshmallow Sweet Potatoes It's delicious!!

A delicious quick recipe:
Marshmallow Sweet Potatoes:

3 large sweet potatoes, cooked until tender, or 1 29-oz. can of sweet potatoes
1 egg
1/3 cup sugar
1/2 tsp. cinnamon
1 tsp. vanilla extract
2 cups mini marshmallows


Step 1
Heat the oven to 350 degrees. Combine the sweet potatoes, egg, sugar, cinnamon, and vanilla extract in a bowl and mix with an electric mixer on medium speed for 2 to 3 minutes. Empty the mixture into a 2-quart ungreased baking dish. Bake uncovered for 25 minutes. Top with the marshmallows and bake for an additional 5 minutes. Serves 4 to 6.

PUMPKIN PIE CHEESECAKE W. CHOCOLATE CANDY SPRINKLES

1 cup canned pumpkin puree
3 large eggs , room temp.
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 cup plus 2 tablespoons sugar
1 1/2 pounds cream cheese, softened
2 tablespoons cream
1 tablespoon cornstarch
1 teaspoon vanilla
2 handfulls of chocolate m&m's

Whisk together the pumpkin, eggs, cinnamon, nutmeg, ginger, salt, and 3/4 cup of the sugar. In another bowl use an electic mixer to cream the cheese with the remaining 6 tablespoons sugar, beat in the cream, the cornstarch, the vanilla, and the pumpkin mixture. Pour this into your choice unbaked crust. Bake at 350 degrees until center is set. (a 10 inch springform will take about 40 minutes.) Graham cracker crust is nice, but the blond flaky kind is fine. Once cool crush m&m's however you like and sprinkle on top of cooled pie.

This is something I have been making for a few years and everyone asks me to bring it parties now....It goes fast and is easy to make.

Bacon wrapped little smokies:
1 pkg Lil Smokies sausages
1 pound bacon
1/2 cup brown sugar

Cut entire pound of bacon into thirds (lengthwise)
Wrap a 1/3 piece of bacon around each lil smokie and place them on a foil covered baking sheet , seem side down.
Sprinkle the whole thing with the brown sugar. Bake at 350 degrees for about 1/2 hour or until bacon is crisp. Serve with tooth picks.

recipe ingredients
5 Roma tomatoes, chopped
1 can (15 ounces) corn, drained
1 can (15 ounces) black-eyed peas, drained
1 can (15 ounces) kidney beans, drained
1 can (15 ounces) cannellini or Great Northern beans, drained
1 can (7 ounces) diced green chiles
6 green onions, sliced
1/2 teaspoon garlic salt
1 teaspoon chili powder
1/2 teaspoon cumin
Juice of 2 or 3 limes
Lime slices for garnish


recipe directions
Combine tomatoes, corn, peas, beans, chiles and onions in a large bowl. Mix seasonings with lime juice in a small bowl or jar and pour over the bean mixture. Serve garnished with lime slices. Makes about 32 servings of a quarter-cup each.

Enjoy the party - one thing is that what you bring is not going to be a big deal - it's a party! And if you bring enough for two, that's enough. Forget the idea that everyone is going to bring enough for ten others and that your host can reheat it all.

Ring and ask - starter or dessert? Or can you bring any cutlery or plates? Then buy some as a gift. Long-life snacks are always OK.

Well I dont know about too quick. But Rice Cheese and Brocolli casserole is really good. Steam Brocolli, and just use a couple bags of minute rice ( cook the rice) then when Brocolli and rice are done, mix together placing into glass oven dish. pour cheese onto rice and brocolli and bake for 10 minutes. It is quick and easy and soooooooooooooooooooooooooo good. I make it every year.

If it is a buffet style party, may I suggest a cheese and meat tray.

Very easy. I like to wrap a plate or platter with tin foil. Then pick up deli meats and cheeses, just ham and cheese, or buy some of each and make an assortment. It can be as complicated or as simple as you like to make it. It will always be welcome.

Put toothpicks in the meat, and a stuffed olive on top, if you like.

But watch around kids, though, so they don't pluck off the olive and try to swallow the toothpick!

And/or dips, chips, soda. Always welcome. Diet or low sodium products for the meat tray might be welcome. Diet for the soda, is often welcome.

Hummus dip! With a bit of garlic, or something, for vegatarians.

How about Blue corn chips? And salsa.

Cheesy Bean Dip & Chips

You'll Need:
2 Cans Spicy Refried Beans
2 Cups Chunky Salsa (Med or Hot)
1 block Velveta(sp?)
1/4 cup Milk
1 Large Sourdough Loaf Unsliced (optional)

Instructions:

Begin by cutting velveta block into 1in. cubes.

Place cubes in large microwavable bowl with Beans, Milk, and Salsa.

Microwave for 2 minutes then stir.
...Now the trick here is to microwave in 1-2 min intervals stirring inbetween until hot. (If you were to put it in for 5 min. straight, it'll leave a burnt flavor.)

Presentation is everything! Serve with tortilla chips

If you want to go the extra mile, serve this in a large sourdough bread bowl:

Cut top of loaf crust. Hollow out inside of loaf. Before serving fill loaf with dip. Cut leftover bread in cubes or strips. (be sure to use bread knife to cut loaf. It's the long one with the serrated edge. Looks like this:http://www.cutlery.com/t3/t11t23t3b.shtml
and should be used in more of a sawing motion so you don't crush the bread.)

Total cook time should be around 10-12 min. depending on bread bowl option.
