With fish I use just a little dribble nearly every time I have fish, and I would suggest you try a little at first, or some in a small bowl as a dip. Using with chips can be a problem and it can make them soggy, and you could find part of a chip that is terribly strong of vinegar taste. Some chippies have those trigger action atomisers to spray the chips. I have found the best chips are those that are wrapped in white newsprint within a minute of being allowed to drip and salted. That way the salt will stick to the chips and not get washed off or fall off to the bottom of the packet. Never unwrap the package but tear open one of the ends and eat them out of there and get the piece of fish out. After the first bite I open the package just enough to wrap around the piece of fish to hold in place and make it easier to dig out the chips. That way they will stay hotter longer.

With vinegar cos it breaks down the fat. Without salt because it's bad for you. By the way everyone out there, never put chips in an oven or microwave to reheat if you have had salt and vinegar sprinkled on them. Causes chemical reaction, which produces carcinogenics. Good health.

salt no vinegar, but I'll only have fish up north where they take the skin off the fish. Can't understand this southern thing where they batter fish with the skin on as the batter lifts the skin off the fish and makes the batter go all soggy. Annoying as I can't even opt for the alternative of chips and gravy as southerners don't get how gorgeously tasty that is either!

With loads of Onion vinegar and a little salt, just enough to coat the chips but not so much that you get that really salty chip that dries your mouth and makes your eyes water.

Fish (Mmm Haddock) and chips with fresh lemon juice and salt. So no vinegar.

With every time. Preferably with pickled onion vinegar (Garner's if you don't have home-made).
But don't put it on until you get home because it makes the chips go cold.
