Bikaner, Rajasthan. This is a somewhat lesser known town north west of the Indian state of Rajasthan. It is very very well known for its fantastic cuisine. It is famous for : ghevar (a kind of cake fried in clarified butter) served only in winter, thick sweet buttermilk drink (lassi..the salt variety is less popular), bhujia and an incredible repertoire of pickles and papadums. Bikaner makes its own unique rassogollas, very different from the bengalee ones, in that it is less spongy and more sweet. Dal bati churma is another winter favorite. Most of the Bikaneri cuisine is made in clarified butter (ghee) and is extremely spicy (read red pepper HOT), great for those who dig that kind of food (like yours truly).

Gujarati people don't eat non veg and they have variety of tasty veg items they are famous for their delicious food like dhokla khaman, patra, bhajiya, undiya, Gujarati kadi-khichdi, daal-bhat, khandvi, bataka wada, thepla, shaak-puri, shrikhand and many other items i cant remember. If u want to enjoy it go for any Gujarati restaurant and have Gujarati thali they have 9-10 items in one thali.
