Beef comes from Bovine. By Bovine we mean a diverse group of about 24 species of medium-sized to large ungulates, including domestic cattle, Bison, the Water Buffalo, the Yak, and the four-horned and spiral-horned antelopes.
But yes most likely it's going to be cows.

How about both? Bulls are cows, cows are bulls. Beef is cattle. I could so go for a new york strip right about now...

Depends on where you get the beef from. Usually it's from young cows or heifers. It can come from bulls too though but the meat is tougher

Beef does come from cattle, but mainly steers, cows and heifers, I reckon a bull would be a bit too tough to tackle.
Veal is from younger cattle.
