Fried Cabbage and Bacon

3 pounds cabbage head
1/2 pound sliced bacon
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon freshly ground black pepper

Cut the cabbage into quarter. Remove any wilted and
discolored outer leaves and cut out the core from the cabbage pieces.
Cut the cabbage into a large 1-inch dice.

Cook the bacon in a 4-quart pot over medium heat
until crisp.. Remove the bacon to paper towels to drain.
There should be about 1/2 cup of bacon drippings in the pan.
Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
Add the water, sugar, salt, and pepper and cook covered
until the cabbage is tender, about 20 minutes.
Crumble the cooked bacon into the cabbage and serve hot.

BAKED CABBAGE WITH BACON

3/4 pound bacon, cut crosswise into 1/2-inch-wide strips
1 1 1/2- to 1 3/4-pound cabbage, quartered, thinly sliced
1 large leek (white and pale green parts only), thinly sliced
3/4 cup water
1/4 cup chopped fresh parsley
1/4 cup chopped green onions
3 tablespoons butter
1 1/2 cups whole wheat breadcrumbs

Preheat oven to 375°F. Place bacon in heavy large pot over medium-high heat. Sauté until fat begins to render and bacon begins to brown, about 12 minutes. Add cabbage and leek. Sauté until cabbage wilts, about 10 minutes. Add water; bring to boil. Cover pot, reduce heat to medium and simmer until cabbage is tender, about 15 minutes. Uncover, increase heat and boil until all liquid evaporates, stirring often, about 10 minutes. Mix in parsley and green onions. Season with salt and pepper. Transfer to 9-inch glass pie dish.
Melt butter in heavy medium skillet over medium-low heat. Add breadcrumbs; stir until crisp, about 10 minutes. Sprinkle breadcrumbs over cabbage mixture. Bake until heated through, about 10 minutes.

6 side-dish servings.

Stir fried cabbage is great.
Chop a large onion very finely and several rashers of bacon into pieces and fry them in some sesame oil until bacon is crisp and onion looks cooked. Add cabbage and stir fry until cabbage starts to wilt. Serve.

You can also add some sliced or diced capsicum (bell peppers) or chillies for extra taste.

CABBAGE WITH PROSCIUTTO
Typical of hearty vegetable dishes of the Apulian region of Italy is this easy-to-make mixture of cabbage, onion and prosciutto.
2 tablespoons olive oil
1 medium onion, chopped
2 pounds green cabbage, halved, cored, very thinly sliced
2 ounces thinly sliced prosciutto, cut into thin strips

Heat 1 tablespoon oil in large Dutch oven over medium-high heat. Add onion and sauté until tender and just beginning to color, about 5 minutes. Add remaining 1 tablespoon oil and cabbage and cook until cabbage is tender, stirring occasionally and adding water by tablespoonfuls if cabbage sticks, about 10 minutes. Mix in prosciutto. Season with salt and pepper.

Serves 6.

I only use cabbage in 3 meals i eat; Chow Mein, Corned Silverside and Stir Fry.

Chow Mein
Mix Chicken Noodle Soup in 1 cup of water in pot. Add Beef or Chicken Mince and stir together. Cook for fifteen minutes. Add 1Cup of Grated Carrot, 2 stalks of Celery chopped, 3 Cups of Thinly Sliced CABBAGE, 1 Onion-Finely Sliced, 1/2 cup of Raw Rice, 3 Table Spoons Tomato Sauce, 2 Table Spoons Soy Sauce, 1-3 Teaspoons Curry Powder to taste, Salt and Pepper. Mix together. Add 1/2 cup of water if needed. Cook for 15 more minutes, stirring occasionally. For BEST RESULTS turn to low heat and allow it to stew, stirring occasionally, for another 30 minutes. Doesn't look too attractive, but it tastes great!

Corned Silverside
Added to Silverside water after meat has been taken out to rest. Mashed.

Stir Fry
Only cooked stightly, so as to keep it crunchy.

I first get the foul outer leaves off and dispose of them, them quarter the cabbage head. in a huge pot of boiling salted water with 2 tablespoons of vinegar (apple is the best, but white and red wine are common), I boil the quarters to a soft consistancy, but not too soft that they fall apart. If you want a meat flavor, use drippings from roast beef or buy commercial beef stock or cubes.

I love cabbage rolls stuffed with ground pork. My step made it for me all the time. I can't remember all the ingredients. She boiled it in a pot, it cooks in it own juices. I know she also put bacon in it.
Someone I lived with made some sort of cabbage pancakes and those were very good too.
