Best coffee whole bean do not grind until your ready to brew.
You don't have to freeze-when coffee is roasted it already starts
to break down in flavor its changing chemically the best thing is to by coffee every 2-3 days freshly roasted for the best taste-
by the way when the bean starts looking oily its either old or French roasted either way try a full city roast very flavorful not bitter.

It's always best to use coffee while it's fresh (wihin 2 weeks of roasting is recommended). If you have to freeze it for a long period of time, do it in small batches. Every time you pull a batch of coffee out of the freezer and put it back, moisture forms on it that will degrade the taste. If you use small batches, you can minimize the problem. Make sure it's stored air tight as coffee will absorb all kinds of odors.

Do not freeze your coffee beans. Keep them at room temperature in an airtight container. The beans taste the best when you can see oil coming out of them and that will be unlikely if you froze them.

coffe beans are to grind in fresh filter coffe. as u know no bean can be grind easily when frozen, any how before grinding what you have to do is to roast it for proper result.
when some asks to keep in the freeze they say so as a precaution against insects which often eats beans if left unused for a longer time, specially in tropical climates.

Alton Brown, food science guru, answered this question. He does not advise freezing coffee beans/grinds, as they actually kills off the flavor. Airtight, opaque containers are best.

My mum taught me that you freeze ground or whole coffee beans because they then retain their flavour. Never go against your mothers advice.
