If there is too much fat, just trim it off with a sharp knife. Sometimes you need a little fat on the meat ( like a leg of lamb for example) so you can roast it in the oven without any oils and just by putting it on the fat side down in roasting pan.

My personal choice is to cut off excess fat before I cook the meat.

you can have the butcher do it or do it yourself but cut off any of the fat you see and grilling allows any left over fat to drip away
