TUNA SANDWICHES:

Revitalizing Tuna Roll

Jenny O'Donnell of the Foodservice Centre in Cheddar created the "Revitalizing Tuna Roll" as her entry in the 2006 Sandwich Designer of the Year Awards category "MCM Select Foods Deepblue Tuna Sandwich Designer of the Year."



Ingredients

Coriander Roll
Deepblue Tuna in brine
Ginger, and fresh lemon and lime grind all mixed in a full fat mayonnaise
Dash of fresh lemon juice
Spring onion
Mixed Leaf
Method

Evenly spread the lemon/lime, ginger mayonnaise mix over both sides of the coriander roll
Spoon the Deepblue tuna over the base
Squeeze a dash of lemon juice over the Deepblue tuna
Place the cut spring onion over the tuna
Place the mixed leaf on the spring onion and tuna
Fold over the top roll slice enclosing the ingredients

Method


Butter Roll

Add Dill Slaw

Add Flaked Tuna

Sliced vine ripened tomatoes

Sliced Avocado

RECIPES FOR TUNA SALAD:

In a small bowl, flake the fish and mix with 2 tbsp of mayonnaise. Tuna and mayonnaise should dominate the salad and not be overwhelmed by the other ingredients. Add celery, green pepper or cucumber (any one or any mixture) chopped in small bits. Add a tablespoon of sweet pickle relish, and two chopped scallions. Add a little salt to taste.

Cut the tops off of two tomatoes, cut each in half, and remove the core and seeds. Put on a bed of a lettuce leaf (Bibb lettuce is best) with ripe olives to make a ring around the periphery. Spoon the tuna salad into the center, and top with a pepperoncini or two. Of course, any other relishes that you may enjoy can be added, such as radishes.

Such a salad makes a satisfying supper, and its nutritional values are obvious--it is low fat (most is in the mayonnaise, 22g.; use a low-fat dressing if you are concerned), low carbohydrate and high protein. Calories, about 400 kcal. A crusty roll is a good accompaniment.

You can use low fat mayonaise as a option.

Hiya. I'm in Ireland.

I don't like Tuna but I make a smashing salmon sandwich.

Put the salmon into a bowl and break it up. (remove bones)
Finely chop some tomatoe and scallions
Put into the bowl with the salmon
Salt and ground pepper (very important)
Plenty of mayonnaise.
Mix all together.
Turn out onto toasted or plian white bread and enjoy with a cup of hot tea. Mmmmm

Cold cut sandwich depends.
If it's good Irish beef then a little brown sauce.
Chicken, turkey etc. either BBQ sauce, Sweet chilli sauce or Mayo.

TUNA FISH SALAD and SANDWICHES:

Ingredients required:
2 cans of tuna fish packed in water
1 bunch of green onions
3 sticks of jalapeno peppers
1 cup of bean sprouts
1 cup of fresh white mushrooms
1 medium tomato
And several leaves of romaine lettuce
1 cucumber
3 tablespoons of mayonnaise (if you're concerned about fat/calories use fat-free mayo) and parmesan or romano cheese (you can also top with sliced cheddar, monterey jack, pepper jack or muenster)
2- 4 slices of whole wheat bread

Directions of cooking:
1. Chop the following ingredients into small pieces; green onions, mushrooms, set aside.
2. Slice jalapenos down the middle from top to bottom, discard seeds, chop into small pieces and set aside.
3. Slice tomatoes and peel and slice cucumbers, keep these ingredients seperate from the other veggies.
4. In a large bowl, mix 2 cans of drained tuna, 3 tablespoons of mayonnaise thoroughly, add jalapenos, bean sprouts, green onions and mushrooms, stir ingredients until everything is mixed into tuna and mayonnaise.
5. Spoon this mixture onto a slice of whole wheat bread covering bread evenly, top with cheese, tomato slices, lettuce and cucumber slices and finish with a slice of wheat bread on top.

How do you cold cut tuna with sandwiches?
Cut diagonally & serve with a slice of pickle or tomato and enjoy!

Drain the oil from a can of tuna and mash the tuna. Add mayonaisse, salt, pepper and a half-teaspoon of dill weed. Add a teaspoon of mustard. Mash well. You can add copped green onions if desired.
For a cold cut sandwich use crisp lettuce and/or a slice of tomato, mustard and mayonaisse. You can add a half teaspoon of horseradish if you like things spicy.
I use Dijon mustard.

well in Ireland i make tuna salade sandwhich with maynoise tuna sweetcorn and onion and dress with lettuce and onions and a bit of carrot
