I've studied German, and I was told in my course that the difference between burg and schloss is:

schloss = castle
burg = town containing the castle

As everyone else has said correctly:

die Burg

or

das Schloss
(formerly spelled as "das Schloß").

The difference between the two words lies in the connotations...

If someone talked about a "Burg" I'd picture one of those medieval well-fortified castles where protection against enemies was the main aspect. Thick walls and ditches and drawbridges... a castle built up on a hill... with a dungeon... you get the picture...

If someone told me about a "Schloss" I'd hear the emphasis on the pomposity and splendor of the castle... a palace...beautiful, grand, representative...
