I mean, if you compare "Dr." Hovind's beliefs on creation and evolution with modern scientific thought, this is the only explanation one could come up with. What do you think?

Evolution is not 'full of holes' - there is plenty of evidence supporting evolution and a common descent.
Just because something seems "illogical" does not make it so. It seems rather "illogical" that we are sitting on a spherical globe, spinning, and rotating a sun, while floating in space. Yet, this is exactly what's happening.
Evolution does not violate the 2nd Law of Thermodynamics. The 2nd Law of Thermodynamics states that in a closed system, things tend to go towards disorder, not order. However, the earth is not a closed system, because we receive energy (in the form of heat) from the sun.
If "the theory of entropy" (I have no clue what this is) is just a theory, why do you support it? You don't support the theory of evolution.
The title of Darwin's work was "The Origin of Species", not "Origin of the Species". Darwin was an evolutionist. He believed in his theory.
There are plenty of transitional forms! Australopithecus afarensis! Homo hablis! Homo erectus!
