Ingredients:-

-500 gms Cottage Cheese (Paneer) How to make paneer
-6 Onion (Pyaj)
-400 gms Tomato (Tamatar)
-1 " long piece Ginger (Adrak)
-2 Green Chilly (Hari Mirch)
-1 cup Cream (Malai)
-1 cup Curd (Dahi)
-100 Butter
-1 tsp Red Chili Powder (Lal Mirchi)
-1/4 tsp Turmeric (Haldi)
-1 tsp Dried Pudina Leaves
-1/2 tsp Garam Masala
-1/2 cup Milk

Method:-

How to make paneer pasanda:
Cut cottage cheese in samll pieces.
Chop onion very finely.
Grind tomato, ginger, green chilly,.
Heat butter in a pan.
Saute onions till pink in color.
Then add tomato paste.
Continue cooking it on medium flame till ghee/oil begins to separate.
Put off the flame.
Add cottage cheese, cream , curd, salt, red chili powder, turmeric, garam masala, dried pudina leaves and mix well.
Keep it aside for an hour.
Put the pan on the flame and then add milk to the mixture.
Simmer for 5 minutes and then finally put off the gas.
Take off the fire and serve hot.

Beat in a blender for 4-5 minutes to incorporate air (this will make the batter fluffier). Let batter rest 1/2 hour in a warm place Cut the paneer into thick cubes. Recipe of an Authentic Indian Paneer Pasanda

Ingredients required:
Paneer - 250 grams
Salt and Sugar - 1 teaspoon each
Kaju powder - 25 grams
Onions - 2
Besan - 2 teaspoon
Curds - 1 cup
Maida - 3 teasppon
Kashmiri mirch - 1 teaspoon
Red chilly powder - 1 teaspoon
Haldi - 1 teaspoon
Roasted jeera - 1 tablespoon
Oil - 100 grams
Cream and Tomato sauce - 1 Cup each
Coriander chopped - Add a few

Ingredients for making Masala Paste:
Posta and Jeera - 1 teaspoon each
Garlic - 4 flakes
Green chillies - 3 each
Ginger - A few flakes
Dalchini - 2
Laung - 3

Directions of cooking:
1. Cut the paneer into 6 equal sized pieces. Sandwich Kaju between two pieces of paneer. Make a batter of Besan, Maida and Red chilly powder.
2. Dip the paneer pieces in this and fry. Transfer to a bowl and keep aside. Grate the onions. Heat oil in a Kadahi. Add sugar. Let it brown. Add onions. Fry till it gets golden brown.
3. Add salt and Masala paste. Fry it for 1 minute. Add Curd, water, Haldi and Kashmiri mirch powder and cook for half a minute.
4. Add tomato sauce. When it becomes thicker, pour it on the fried paneer. Garnish with fresh cream and roasted Jeera. Sprinkle some coriander leaves. Serve it hot.

Ingredients
200 gms Paneer sticks
1 red onion finely chopped
8 oz tomato puree
3 tbsp ghee
1 tbsp ginger paste
1 tbsp garlic paste
1 green chilli chopped
5 cloves
1 tsp cardamom powder
1 carrot chopped
2 tsp kasoori methi
2 tsp all purpose flour dissolveddd in 1/2 cup water
salt to taste
1/2 tsp sugar
1 pinch red chilli powder
1/2 tsp garam masala
1/2 tsp cumin powder
1 cup water

Instructions
Heat ghee and saute onions till translucent. Add ginger, garlic, green chillies and cloves
Add carrots and cardamom powder, saute for a minute
Add tomato puree and cook covered for about 10 minutes
Add 1 cup water, boil and let it simmer
Blllend the mixture in a puree
In 1 tbsp hot ghee, add kasoori methi and saute. Add blended mixture and cook for about 5 minutes on medium heat
Add flour paste, salt, sugar, red chilli powder and garam masala. Mix, add paneer pieces and serve hot.

Chopped Raisins 25 gms
Cornflour ½ cup
Bay leaf 1 No.
Whole Garam masala 1 tbsp.

Chopped green chilli 1 tbsp.
Garlic paste 1 tbsp.
Ginger paste 1 tbsp.
Red chilli powder 1 tsp.

Boiled Onion paste ½ cup
Cashewnut paste 2 tbsp.
Tomato puree 2 cups
Green cardomom powder 1 tsp.
Fresh cream ½ cup
Sugar 1 tbsp.
Oil 2 tbsp
Oil For deep frying
Salt As per taste



1. Cut Paneer into ¼ inch thick slices of 1½ inch by 1½ inch size.
2. Mix chopped cashew nut, raisins, and 100 gms mashed paneer. Season with salt .Stuff this mixture between 2 slices of paneer.

3. Prepare a thick corn flour batter and dip stuffed paneer pieces in the batter and then deep fry in moderate hot oil till crisp . Remove and keep aside.

4. Heat oil in a Kadhai. Add bay leaf and Whole Garam Masala. Add Boiled Onion Paste. Cook for 2 minutes.

5. Add chopped green chilies, Ginger Paste, Garlic Paste and red chili powder. Cook for a minute.

6. Add tomato puree and bring to boil. Add Cashew nut Paste dissolved in a little water. Cook for 5 minutes. Stir constantly. Add salt and green cardamom powder

7. Add one cup water and sugar. Bring to boil. Finish with fresh cream and fried stuffed paneer pieces. Serve hot.
