Never tried this, but it has chicken, pasta, cheese, and mayo and is served cold as ordered! Personally, I would like leftover chicken better than canned though.
INGREDIENTS
* 1/2 pound uncooked spiral pasta or medium shells
* 1 cup frozen corn kernels, thawed
* 1 cup sliced mushrooms
* 1/2 cup diced celery
* 1/4 cup minced onion
* 1/2 cup sliced green olives
* 1/2 cup diced green bell pepper
* 1 cup shredded Cheddar cheese
* 3/4 cup Italian-style salad dressing
* 1/2 cup mayonnaise
* 2 (10 ounce) cans chunk chicken, drained
* salt and pepper to taste
DIRECTIONS
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and pour pasta into a large dish.
2. Stir in the corn, mushrooms, celery, onions, olives, bell pepper and cheese.
3. In a separate bowl, whisk together the salad dressing and mayonnaise, then pour this mixture over the salad and toss again, to coat. Add flaked chicken and toss gently a final time.

Baja Chicken Pasta Salad
Ingredients
3/4 lb Chicken Breast; *
6 oz Dried Mixed Fruit; **
1 c Ring Macaroni Or Orzo; Raw
1 c Jicama; Cubed
2 Green Onions/Tops; Sliced
1/2 c Mayonnaise Or Salad Dressing
2 tb Sour Cream Or Plain Yogurt
1 ts Red Chiles; Ground
1/4 ts Salt
Instructions
* The chicken breast should be boneless, skinless and weigh about 3/4 ** You should use 1 6-oz package of diced mixed fruit. ------------------- Heat enough salted water to cover the chicken breast (1/4 tsp salt to 1 cup of water) to boiling in a 4 quart Dutch oven. Add the chicken breast.
Cover and heat to boiling, reduce the heat and simmer until the chicken is done, about 15 to 20 minutes. Remove the chicken with a slotted spoon.
Heat the water to boiling and add the fruit and ring macaroni or orzo gradually so that the water continues to boil. Boil, uncovered, stirring occasionally, just until the ring macaroni is tender, about 6 to 8 minutes or 10 minutes for the orzo, then drain. Rinse with cold water and drain again. Cut the chicken into 1/2-inch pieces and mix with the fruit, macaroni, jicama and onions. Mix the remaining ingredients and toss with the chicken mixture. Cover and refrigerate until chilled, at least 2 hours.
Top with crumbled Ranchero Mexican Cheese

Easy...take the cold, leftover chicken and cut up into small bit size pieces. Boil any small pasta noodles, (i.e. bowtie, rotini, macaroni, etc.) You'll want 1 -2 cups of chicken and the same of the pasta. 2 celery stalks, thinly sliced or diced. 1/3 of a small onion finely diced. Sweet grape tomatoes, about a dozen, cut in half. If you have a bag of frozen peas, or corn or carrots, or a bag of frozen mixed veggies, throw that in, no need to cook first. Just toss the frozen veggies into the cooked, drained pasta, add chicken, celery, and then add 2 to 3 tablespoonsful of Mayonnaise and a teaspoon of mustard. If you have Dill weed available, add a half teaspoon of that. Shredded cheddar or diced mild cheese of any kind can be folded in last of all, about one cup and then refrigerate for about one hour. If you want to make it a bit creamier, add a bit more mayo. Toss or stir gently before serving.

I bought a Caesar Chicken & pasta salad from a deli that was really good. Use fresh parmesan cheese and a good brand of Caesar dressing...not Kraft. Cardini's is the best brand..Caesar Cardini actually invented the Caesar salad in his restaurant.
