I know it's a by product of geese (I think), but exactly what I'm not sure.

I heard that the goose is fattened using a funnel in it's mouth to force feed it grain....is this correct?

Yes it is made by force feeding geese so that their livers become enlarged and then harvested to make patie de foi gras, a ground goose liver delicacy that is quite expensive but delicious.

it's goose liver, or in some cases it's duck liver. what they do is they force-feed ducks and geese so that their livers get huge and distended, then they cut up their livers into foie gras.

foie gras translates into "fat liver"

the fowl is overfed to ensure a fat liver and there you get it. because it's fattier than regular goose or duck livers, it has a creamier, buttery taste.
