my husband caught a couple big small mouth bass and fillet them.how should i cook them?

SImple is best...fry them. I spent most of my life catching perch and bass & have prepared them his way:

put a cup of flour in a flat surface/cookie pan. Add a tsp of salt, tsp pepper, and whatever other spice you like. Mix the drry stuff. Wash the fish and shake drry, then flour them on ach side.

Plac in a frying pas with meelted butter or veg oil heated to near simmer. Enough to cover the bottom of pan. Watch for splatter of oil. Cook on each side until brown, cover it to cook thouroughly. .

Optional to flour is pancake batter mix with the salt and pepper added.

They are really good grilled. Brush them with garlic butter and put them on a hot grill for about 5 minutes. Turn over and another 5 minutes.
Or
Roll them in a mixture of white flour and cornmeal with some salt, pepper, garlic powder and Thyme. Place in a lightly grease shallow pan and put in a 400 degree oven for about 10 minutes. Turn over and give them another 10 minutes.

Barbeque in foil with raw garlic, salted butter, chive and paprika. Create a sour cream, cream cheese sauce with bacon bits for dipping. Side plate with rosemary pan fried potatoes.

grilled fresh bass. yum. just season it with salt,pepper and lemon juice. then grill them.

beer batter...it will keep the "fishy" smell out of the house as well
