I've eaten a good deal of bear meat and the taste always depends on what the bear had been feeding on before its death, it's age and its sex. The meat does have a tendancy to be on the sweetish side, but for a boar bear (male) you will probably have to marinate with an acid (orange juice, red wine, basalmic vinegar) to get rid of the gaminess. Cook bear the same way you would venison and season as you would a good beef roast. And always bless your meat before you eat it just for the spirit of the bear. Good luck.

I have only had bear meat as sausage. It was rather sweet and very greasy, but then again there is usually a lot of fat in sausage. The taste of meat depends greatly on the time of the year the bear was killed. In Alaska most of the hunters try to get their bears in early Spring, because the bears are eating grasses and vegetation, so the meat is sweeter. Later in the year, they're eating a lot of fish and meat, so they don't taste as good.

You can eat bear meat, it taste like a cross between pork and chicken. I have roasted, fried and barbequed the meat with no problem, although it does tend to have more grease than pork does. Have fun and trysmall amounts prepared different ways to find out what is best for you.

Recently, I was offered Bear liver and excepted. A few of us got together and had a yummy dinner, including the Bear liver W/onions ~~~Since then I have had a few negative responses. Told not to ever eat Bear liver, that it could make me very sick or die. Could there be any truth to this? thank you...
