I like toasted whole wheat bread with a melted slice of mozzarella and a slice of tomato. It is so good, even my kids like it and it is fast and easy as well as healthy for you.

I dont like eating breakfast but I know if I dont my blood sugar will drop while I am at work so this is not good.
Every morning I make a smoothie with low fat milk, greek yoghurt
(low sugar content), Equal( no sugar) and either a banana or wait for it a whole tablespoon of instant coffee.
If you dont have to worry about sugar the choices are endless.

BREAKFAST CASSEROLE
1 1/2 pounds sausage
6 slices bread, cubed
1 1/2 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
2 cups milk
1 teaspoon dry mustard
4 ounces mushroom pieces, drained
1/4 cup green bell pepper, diced
1/4 cup green onion, diced
Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with remaining ingredients. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes.
Note: Other ingredients may be added or substituted for the vegetables.
Serving Size: 8
BREAKFAST SANDWICH
English Muffin
Egg
Sausage Patty
Slice of cheese
Jam
Fry Egg & sausage patty. Toast English Muffin. Butter muffin, spread jam on muffin. Top with a slice of cheese, sausage & egg.
VANISHING BREAKFAST ROLLS
10 refrigerator biscuits
1 tablespoon butter
2 tablespoons sugar
1/2 teaspoon cinnamon
5 large marshmallows, cut in half
Preheat oven to 375*.
Melt butter in microwave for 20 seconds.
Mix cinnamon and sugar. Cut marshmallows in half and roll in melted butter, then cinnamon-sugar minxture.
Pat each biscuit flat. Wrap the marshmallows in biscuit.
Seal the edges of the biscuit. Do not get sugar on edges of biscuit or it will not seal.
Place in oven for 11-13 minutes or until lightly browned.
EASY BREAKFAST HASH BROWN CHEESE BAKE
1 pkg. (32 oz.) frozen shredded hash browns
2 cans of potato soup
2 (8 oz.) sour cream
2 c. grated sharp cheddar cheese
1 c. Parmesan cheese
Combine all ingredients, stir well. Spoon into greased 9X13 baking dish.
Bake at 350 for 40 minutes or until a little brown.
BREAKFAST BURRITO
1/2 lb. smoked sausage, cubed
1 med. onion, diced
1 med. bell pepper, diced
1 tomato, diced
1 tbsp. garlic, minced
8 oz. shredded cheddar cheese
4 eggs
8 10" flour tortillas
Sauté all ingredients except eggs and cheese on medium high heat for 10 minutes. Add eggs; cook until eggs are done. Wrap in flour tortillas and add cheese.
Fold and top with picante sauce.
8 servings.

Fresh fruit on a waffle with whipped cream.
Scrambled eggs with a bit of Parmesan cheese sprinkled into it.
Toast with almond butter, plus fruit.
A chocolate croissant and coffee.
Scrambled eggs with a bit of fried pepperoni thrown in.
Quiche (Buy a ready made pie crust and cook it at 450 Fahrenheit for 6 minutes, Next, place cooked veggies, mushrooms or cheese into the crust. Mix scrambled eggs and milk 1:1 and pour over the veggies. Bake it for 1 hour at 350. You can make it the day before and reheat it in the microwave.)
Toast or bagels covered with cream cheese, tomatoes, capers, sliced onions and smoked salmon!

Kashi Go Lean Crunch is one of my faaaavorite cereals, mainly because it's filling (this coming from a girl who could readily eat half a box of Frosted Flakes in one breakfast sitting), it's sweet (again coming from someone who dumps 4 packets of Splenda into a bowl of unsweetened cereal), and it just plain tastes good.
Honey Bunches of Oats With Almonds is also a tasty cereal.
If you're not the cereal type, try oatmeal with fruit in it, or with maple syrup or honey.
Bagels and cream cheese are also some of my favorite breakfast choices! (Can't go wrong with toast, either....)
