I would suggest doing something that you're familiar with, something that you know how to cook well. Taking risks just to try something new might not always turn out the way you want it, and it may end up with you guys just going out to dinner in that case. Easy but tasty, such as Lemon Herb Chicken Breast, Black Pepper Sauteed Mushrooms (and if you're over 21, add a dash of Kahlua ;), and some seasoned veggies. For that kind of plate, you'd want to prepare the plate rather than a family style dinner where you have larger portions of things in plates or bowls and you all just dig in. If you want to take risks, dessert is usually always the best one to do so with. With those, you have a better chance of having a pleasant surprise rather than a disaster!

I get all my ideas from the Food Network website. We like Italian food, so I use Giada's recipes from "Everyday Italian". She has several "romantic dinner" menus. Rachael Ray has a few romantic menus as well that really good. You can search around the different shows and find something that is at your level of cooking and that suits your taste. Baked Ziti
2 lbs. Ziti (uncooked)
2 lbs. Ricotta Cheese
3 Oz. Grated Romano Cheese
3 Cups Garlic & Onion Tomato Sauce (any brand will do)
1/2 Teas. Black Pepper
1 1/2 lbs. Shredded Mozzarella Cheese

Cook Ziti according to package directions - 12 to 14 minutes
until al dente stirring often. After cooking, drain ziti well, but
DO NOT RINSE OFF UNDER WATER! While Ziti is cooking preheat oven to 350F. Combine ricotta, romano, tomato sauce (reserve 1/4 cup) and pepper in large mixing bowl. Gently combine cooked ziti with cheese/sauce mixture. In a 13"x9"x2" pan, spread the 1/4 cup reserved sauce. Add ziti and top with mozzarella cheese. Cover loosely with
aluminum foil and bake until mozzarella is thoroughly melted (about 12-15 minutes). Serve with garlic bread and additional sauce if desired.



CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1-2 Tomatoes, diced
1 ½ cups Ranch or Cucumber Ranch dressing

In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.


CHEESY GARLIC BREAD
1 loaf Italian or French bread, sliced lengthwise
2 tbsp. parmesan cheese
1/2 tsp garlic powder (or to taste)
1/4 cup butter, softened

In a small bowl, mix cheese, garlic powder and butter. Spread over bread and place in oven, broil for 5 minutes or until golden brown and bubbly. Cut into slices and serve.

Sure, just cook something he likes, don't make it too fancy. Guys just want food, they don't really care about the time and trouble to cook it. Hot dogs would probably be fine with him. Unless he's a chef or something.
