Hi! Here are some carrot recipes I found:

Candied Carrots
From Diana Rattray,
Carrots cooked with a sauce of molasses, butter, allspice, and ginger.

INGREDIENTS:
6 large carrots, peeled
12 small white onions, peeled
3 tablespoons butter
1 tablespoon sugar
1/3 cup light molasses
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
PREPARATION:
Using separate medium saucepans, cook carrots and onions, covered, in boiling salted water for 20 minutes, or just until crisp-tender; drain each well.
Melt butter in large skillet; stir in sugar, molasses, salt, and spices.
Heat, stirring constantly, to the boiling point. Add carrots and onions, stirring to coat well with syrup. Simmer, stirring frequently, for about 10 minutes, or until nicely glazed.
Candied carrots and onions serves 6.

Carrots au Gratin

Carrots are cooked with chopped onion and bell pepper, topped with Parmesan and cracker crumbs.
INGREDIENTS:
4 tablespoons melted butter, divided
1/4 cup saltine cracker crumbs
2 tablespoons grated Parmesan cheese
dash pepper
2 1/2 to 3 cups sliced carrots
1/4 cup chopped green bell pepper
3 tablespoons chopped onion
PREPARATION:
Recipe directions for carrots au gratin
In a small bowl, toss 2 tablespoons of melted butter with cracker crumbs, Parmesan cheese, and the pepper; set aside. Cook carrots, green pepper, and onion in salted boiling water just until tender.
Drain. Stir in remaining 2 tablespoons butter. Top carrots au gratin with buttered crumbs.
Carrots au gratin recipe serves 4 to 6.

Hope this helps:) Happy Thanksgiving!

I hope that at 14 you don't have to make the whole dinner!

A few very easy and tasty things follow...

Boil peeled/sliced carrots and peeled diced turnips together and then mash 'em up like potatoes - a little lumpy is ok. It might not sound right if you haven't had it before, but it's pretty good.

Make some whole berry cranberry sauce by boiling 1 bag of cranberries, 1/2 cup of sugar, and about 3/4 cup of water. Boil it up until the berries are popped and soft. Once they're soft, mash them up a bit if you'd like. If it's too watery, boil it some more. If it's too thick, add a little more water. If it's too sour, add some more sugar. If you'd like, you can add a little of the outer peel of an orange, either minced or ground (just the orange part of the peel, not the white inner part - that's bitter). If you want a little orange flavor and have no oranges, add a couple of tablespoons of orange juice or maybe a tablespoon of marmalade if you have that. Serve warm or chilled.

Cook up some pre-packaged biscuits. About five minutes before they're done, sprinkle each with a little shredded cheese for fancy biscuits. Instead of shredded cheese, you can use a little square of some hard cheese like cheddar, just don't go with American/process cheese - too greasy and no flavor. Maybe do it on half of them in case not everyone likes cheesy biscuits.

Baked butternut squash. Get pre-cut fresh or cut and frozen butternut squash. If you've got strong hands and are good with a sharp knife, you can use whole fresh squash and peel them yourself. You want to end up with chunks or slices of the squash, no seeds, no peel. Put in a baking dish (like a 9" x 9" Pyrex or metal). Add a few pats of butter. If you want, you can sprinkle with a few dashes of cinnamon and/or nutmeg, or some ground black pepper. Cover with foil and bake at 350 for about half an hour, remove foil, check doneness. If it seems pretty watery in there (like a half inch or more of moisture) or if the squash is not yet fork-tender, keep cooking without the foil covering. Probably about an hour at most should be enough. Scoop it out of the dish into a pot or heat-proof bowl and mash it all up. Yum-yum.

Sweet Potato Dumplings:

Cut uncooked, peeled sweet potato into 1 inch chunks.

Wrap each chunk with a canned biscuit.

Place in a greased casserole dish.

Melt 1 stick of butter in a saucepan. Add 1 cup of water, 1 cup of brown sugar, 1 tsp of cinnamon. Mix well.

Pour over top of dumplings. Bake at 350 degrees until dumplings are brown (about 30 - 40 minutes). Baste occasionally with the sauce from the bottom of the casserole dish.

Delicious!

Found some great ones at the local grocer courtesy of Sunset magazine, I will be trying these 2:
Romaine Salad with Pecans and grapefruit
12oz Romain lettuce leaves rinsed and chopped into 1/2 inch pieces
1 cup fresh ruby red grapefruit segments
1 cup glazed pecans
Dress with 1/3 cup vegetable oil that has been whisked together with 1/3 cup rice vinegar
sprinkle servings with kosher salt to taste

Cranberry Ginger sauce
12oz fresh or frozen cranberries
2 (approx 8oz) seedless clementines or tangerines rinsed and quartered
3 tablespoons coarsely chopped and peeled fresh ginger
6 tablespoons lime juice
1/2 cup clover honey
In a food processor or blender combine cranberries, tangerine (include peel) ginger, lime juice and honey until finely chopped and completely combined. Spoon into serving bowl or cover and refrigerate until ready to serve.

They are both really easy and will look and taste really impressive! Good Luck!

I made the best appetizer last night. Bacon wrapped spanish olives.

Preheat the oven to 375*
Take large spanish martini olives and wrap each with a half-strip of lean bacon. I used turkey bacon and it was fantastic. Roll the bacon around the olive and secure with a wooden toothpick by skewering through both sides of the bacon and the olive within. Put in the oven and keep your eye on it. After about 12-15 minutes you will see the bacon begin to bubble and it's done.

It was a great hit and it was so easy. Best of luck!
