You have to make it clear to her that it is because of her psychotic behavior that you're breaking up with her. Cite specific moments in your relationship that she has crossed the line of sanity and tell her you can't have her in your life anymore...then watch your back, pretty much forever...never get mixed up with psychos, no matter how cute they seem!
Furthermore, don't start seeing someone else immediately if that is your plan, it will be torture for the new girl if the ex is truly crazy and wants to make her life miserable. The psycho is going to try and get back in your good graces in some demented way...stay strong!

cold turkey. Just tell her it isn't working and don't try to 'let her down easy, if she has a true psychosis or mental illness, she'll feel you're sending her mixed signals anyway. If she's just clingy and immature she'll keep wondering if she still has a chance with you.

start acting like her .. :) ... let her think your psycho and she'll run away ... or you can try by ignoring her ... gradually ... tell her that she's too good for you and that your not worthy of her ...
