Don't put offf finding out what the problem is, -- if it is actuall loss of oil pressure, you are not going to have an engine very long! However if the sending unit is bad, or the wire to the sending unit shorting (or broken) somewhere (but not totally in either condition), - just intermittent, -- it is just a worrysome annoyance!
Or it could be an intermmittent 'sending unit". In any case I wouldn't mess around, - I would find out what it is asap! After I know what it is, then I might wait and fix it at a more opportune time (if the oil is pumping ok, and the presure is ok)! Bad wires or sending units won't ruin an engine, -- but are unreliable, and should be fixed when you get the time (preferably soon)!! Just in case something really does go bad, ---and you can't read it bacause of bad (other) components!

You should go to the dealership ASAP and have them read the code. It could be anything from low oil pressure (very bad) to abs malfunction (also bad), to a dirty air cleaner (mass air sensor).

If you are looking to save money, call Autozone, Pep Boys, etc and see if they will read the code for free, some will. Also as long as you have not disconnected your battery, even if the light is off, the code should be stored in your ECU so don't wait for it to come back on!

You have a major problem with either the ECU or one of the sensors controlling it. You need to go to a Ford dealer and get the codes checked, this will tell you what is wrong with the vehicle
