Yeast in the air (what home brewers refer to as "wild yeast") gets into the juice and the yeast then feeds on the natural sugars in the juice and cause fermentation. The end result of all of it is that it goes from fermention to producing alcohol (at which point you would have wine).

Wild yeast cells in the air or in the fruit juice will start to work on the natural sugars in the juice to produce alcohol. When the yeast has turned all the available sugars into alcohol fermentation stops and you have wine. Winemakers use special winemakers yeasts to control the fermentation and resulting taste of the wine.
