If you add vanilla sugar, you would have to use less regular sugar. And I don't think the flavor would be very strong. it might cook away. You'd be better off adding the vanilla sugar to your coffee.

I know you didn't ask for this, but here's a way to make your own vanilla extract, which can be pricey. Take a whole vanilla bean, which you can get from a health food store or specialty store. They run about five dollars apiece. Buy a bottle of cheap vodka, the non-flavored kind.

Vodka is just alcohol, which cooks away. Alcohol is used to extract the flavor from vanilla beans. So just break up the bean and drop it in the bottle of vodka, and let it soak. You will get a whole bottle of vanilla extract! You can even transfer it into small, fancy bottles and give it to your friends who bake as gifts!

If you need sugar but also need vanilla extract, you can use the vanilla sugar and skip the extract. Then the result is more or less the same as the vanilla sugar already has the extract.

No, not the same at all. Vanilla extract is a liquid flavoring. Vanilla sugar is sugar that has been lightly flavored with vanilla. So the vanilla extract is much stronger. If you bake with vanilla sugar, the heat of the oven will pretty much wipe out any essence of vanilla in the sugar. Vanilla sugar is mostly used when you roll something in sugar after it comes out of the oven or the deep fryer (in the case of donuts)

Vanilla sugar is cane sugar with a vanilla flavor. It's very good in coffee.

Vanilla extract is alcohol "defused" vanilla beans. This is used for baking, but also great in coffee grounds.

No problem using vanilla sugar, if you have made some.
One extra spoonful of sugar won't spoil your recipe. If you want to be really conscientous, take off the same amount of sugar as you use vanilla sugar.
Vanilla sugar has a much better aroma than the essence, and it is NOT true that it will loose its aroma during baking.

Not the same.
Vanilla sugar is the end product of storing your split and stripped vanilla beans in securely covered granulated sugar for an extended period of time...a great way to get the best use out of an entire vanilla bean(which can be very costly!)

It is feasible however, to substitute extract(a few drops) and regular sugar in your recipe...purely a flavor component,

I agree with the first anwser. the sugar in vanilla sugar will throw off your ratios in your cookies. vanilla extract can replace vanilla sugar, not the other way around.
