Apple Cobbler
Ingredients
3/4 c sugar
2 tb flour
1/2 ts cinnamon
1/4 ts salt
5 c sliced apples
1/4 c water
1 tb butter or margarine
1 c flour
1 tb sugar
1 1/2 ts baking powder
1/2 ts salt
3 tb shortening
1/2 c milk
Instructions
Combine sugar, flour, cinnamon & salt. Mix with apples. Pour into baking dish. Sprinkle with water & dot with butter or margarine. Cover with foil & bake at 400 for 15 minutes. Meanwhile, sift flour, sugar, baking powder & salt. Cut in shortening. Stir in milk. Drop by spoonfuls onto hot apples.
Bake uncovered for 25-35 minutes. Makes 6 servings.
Classic Pecan Pie
Ingredients:
1 9-inch unbaked pie shell
3 eggs
1 cup sugar
2/3 cup dark corn syrup
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/8 teaspoon salt
3 tablespoons Armagnac or other brandy
1 1/2 cups pecan halves
Preparation:
Preheat the oven to 400 degrees F. In a glass mixing bowl beat the eggs. Blend in the sugar, syrup, butter, vanilla, salt and Armagnac. Stir in the pecans. Pour the mixture into the pie shell and bake 10 minutes.
Lower the oven to 350 degrees F. and bake 30 minutes or until a wooden skewer or knife inserted into the pie comes out clean. Cool on a wire rack.

Butterscotch Apple Pecan Cobbler
1 (12 ounce) package nestle toll house Nestle Toll House butterscotch-flavored morsels (2 cups)
1/4 cup brown sugar, firmly packed
1/4 cup all-purpose flour
1/2 teaspoon cinnamon
2 1/2 lbs tart apples, peeled and diced
Topping:
1/2 cup all-purpose flour
1/4 cup brown sugar, firmly packed
4 tablespoons butter (1/2 stick)
1 cup pecans, chopped
3/4 cup quick oats or old fashioned oats, uncooked
Preheat the oven to 375.
In a small bowl, combine butterscotch morsels, brown sugar, flour and cinnamon; set aside.
Place apples in a 13x9 inch baking pan-sprinkle morsel mixture over the apples.
Bake for 20 minutes.
To make the topping, combine the flour and brown sugar; cut in butter with pastry blender or two knives till mixture is crumbly.
Stir in pecans and oats.
Sprinkle over apple mixture.
Bake 30-40 minutes or until apples are tender.
Serve warm with vanilla ice cream or whipped cream.

"Texas Pecan Pie" - 6 to 8 servings
1 cup all-purpose flour
1/4 tsp. salt
1/3 cup shortening
3 tbsp. cold water
FILLING:
1 1/4 cups chopped pecans
1 cup plus 1 tbsp. light corn syrup
3 eggs
1/2 cup plus 1 tbsp. sugar
1 1/2 tsp. vanilla extract
Pinch salt
In a bowl, combine flour and salt; cut in shortening until crumbly. Gradually add cold water, tossing with fork until ball forms. Roll out pastry to fit a 9" pie plate; transfer pastry to pie plate. Trim pastry to 1/2" beyond edge of plate; flute edges. Sprinkle with pecans; set aside.
In a small mixing bowl, beat the corn syrup, eggs, sugar, vanilla and salt until well blended; pour over pecans. Bake at 350* for 45-50 minutes or until a knife inserted near the center comes out clean. Cool on wire rack.

Deep Dish Amaretto Pecan Pie
1 1/2 cups granulated sugar
5 eggs
1/4 cup butter, melted
1 1/4 cups light corn syrup
1/2 cup amaretto liqueur
3 cups chopped pecans, divided
2 Sugar Crusts
In a medium mixing bowl, whisk sugar and eggs. Add butter, corn
syrup and amaretto. Put 1 1/2 cups chopped pecans on top of each of
2 sugar crust-lined pans. Pour liquid mixture on top of pecans. Bake
at 350 degrees F for 40 to 45 minutes or until filling is firm, but
do not over-brown.
Sugar Crusts
1 cup butter
1 cup granulated sugar
3 eggs
4 cups all-purpose flour
1 teaspoon salt
Place butter and sugar in mixing bowl and beat until creamy. Add
eggs, one at a time, scraping sides of bowl after each addition.
Sift flour and salt and add to creamed mixture. Mix until dough
comes together. Remove from bowl and knead the dough into a ball.
Wrap with plastic and refrigerate at least one hour. Roll half of
the dough 1/4-inch thick and line a spring form pan half way up the
sides. Repeat process with remaining dough. Cover; place in the
refrigerator until needed.
Makes 2 crusts.
