Mac and Cheese
Ingredients:
1 16 ounce box elbow macaroni
2 cups cream-style cottage cheese, small curd
1 cup sour cream
1 egg, slightly beaten
3/4 teaspoon salt
dash pepper
16 ounces of shredded cheddar cheese
paprika
Directions...
Note:
Cheddar cheese is great but feel free to use a mixture of
cheeses...
Cook macaroni according to package directions; drain well. In a medium bowl combine cottage cheese, sour cream, egg, salt, and pepper. Add shredded cheese; mix well. Add cooked macaroni, stirring to blend well. Turn mixture into a greased 9x13" baking dish. Sprinkle with paprika. Bake at 350° for 45 minutes.

Chicken Macaroni and Cheese:
1 (16-ounce) loaf pasteurized prepared cheese product, cubed
1 (8-ounce) container sour cream
1/2 cup milk
2 1/2 cups chopped cooked chicken
8 ounces penne pasta, cooked
Cook first 3 ingredients in a Dutch oven over medium-low heat, stirring constantly, 5 minutes or until cheese melts. Stir in chicken and pasta; cook, stirring constantly, 5 minutes or until thoroughly heated.
Note: To lighten recipe, use light pasteurized prepared cheese product, light sour cream, and 2% reduced-fat milk.
Spicy Chicken Macaroni and Cheese: Substitute 2 (8-ounce) loaves Mexican-style pasteurized prepared cheese product, cubed, for the regular cheese product.
Yield: Makes 4 to 6 servings

4 cups (1 pound) elbow macaroni
5 tablespoons unsalted butter
4 cups milk
1/2 medium onion, stuck with 1 clove
4 cloves garlic
1 bay leaf
3 sprigs fresh thyme
1 teaspoon dry mustard
2 tablespoons all-purpose flour
2 cups grated Cheddar, plus 1 cup in big chunks
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper
Cook the macaroni in a large pot of boiling salted water until done, about 5 to 7 minutes. Drain and toss it with 2 tablespoons butter; set aside.
Heat the oven to 350 degrees F.
Coat a large baking dish with 1 tablespoon butter and set it aside. Put the milk into a saucepan and add the clove studded onion, garlic, bay leaf, thyme, and mustard. Warm over medium low heat until the milk starts to steam, about 10 minutes. Remove from the heat and let the flavors infuse while you make the roux. In a large pot over medium heat add 2 tablespoons butter and the flour. Cook, stirring, for about 2 to 3 minutes; don't let the roux color. Strain the infused milk onto the roux, whisking constantly to avoid lumps. Cook, stirring often, for about 5 minutes until the sauce is thick. Remove from the heat and add 1/2 the grated Cheddar and 1/2 the Parmesan; stir until it is melted and smooth. Taste and adjust seasoning with salt and pepper. Pour this over the macaroni, add the chunks of Cheddar, and mix until well blended; put this into the prepared baking dish. Sprinkle the remaining Cheddar and Parmesan cheeses evenly over the top. Bake until the top is golden and crusty, about 25 to 30 minutes.

Done, Gone Mac & Cheese
5 C Lrg. Elbow Macaroni
1/2 lb. Sharp Cheddar Cheese, grated
1/2 lb. Longhorn Cheddar Cheese, grated
1/2 lb. Mexican Ranchero Cheese, crumbled
1 C Milk
1 1/2 C Crumbled Cheeto’s
Cook the Mac al dente, not quite done
Combine all the Cheeses
Layer Cheese and Mac, Cheese and Mac, (you get it)
Pour in the Milk
Top with Cheeto’s
Bake 45 min. @ 350
Footnote: This also is good with chopped Ham mixed with the Cheese.
Kids love it with Hot Dogs on Top, put them on top the last 15min.

My aunt makes great mac and cheese. She takes 2 boxes of Rigatoni (SP?) noodles, cooks them according to package, puts in a pan, tops it all with a layer of velveeta cheese, and adds a little milk. Bake 350 degrees for 30-45 minutes, until cheese is melted. MMMmmm, good

My kids love this and you know how kids love mac and cheese! Now they won't eat the box kind anymore!
1 pound box elbow mac. noodles
1/2 big box of velveeta cheese, cubed
about 1/2 cup milk
1/2 to 1 stick butter
Salt and pepper to taste
Cook the noodles and drain, then add the rest and stir untill melted. Enjoy!

3cups cubed Velveeta cheese

2Tbsp butter
boil macaroni till done, drain, rinse with hot water return macaroni to pan put on low heat add butter stir until melted add flour,stir add milk and cubed cheese stir until cheese is melted salt and pepper to taste
