This is old fashioned Cranberry-Orange Relish & it is yummy!! You grind in a food grinder -- but no one actually has those anymore, so use a food processor and chop VERY FINELY a package of cranberries, then 3 washed oranges with seeds removed, then sugar-at lease a cup or to taste. We make this every Thanksgiving. Do not cook this, just refrigerate. Enjoy!

Does the recipe call for peel or "orange peel zest"? The thin outside part of the peel(zest) is used in many recipes. The thicker part(the pith) is bitter and usually not used. There is a tool that looks like a small grater that is used to grind the zest part of the peel.

It'll be very bitter with the pith. Use the zest and just juice the orange. Forget the pulp it'll be inedible.
One package cranberries, 3/4 cup sugar, 3/4 cup water. Simmer until berries pop with help from a back of a spoon. Add zest and juice. Refrigerate. Serve in a crystal dish.

I typically shred orange peel for recipes. You don't want too strong of a taste of the peel, and it blends better. Save time mincing by just getting a cheese grater.
