PUMPKIN ROLLS

Ingredients:
3 Eggs
1 cup sugar
2 / 3 cup canned pumpkin
1 teaspoon lemon juice
3 / 4 cup flour
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup chopped nuts,,pecans
8 ounces cream cheese ( softened )
1 cup powdered sugar
1 teaspoon vanilla 4 teaspoons butter ( softened )

Cream together eggs,sughar, pumpkin, and lemon juice until light and fluffy. Then add flour, baking soda, and pumpkin pie spice. Pour batter into a jelly roll pan ( line a cookie sheet with wax or parchment paper ) and spread evenly. Sprinkle nuts onto mixture. Bake at 375 degrees in a preheated oven for fifteen minutes.
Sprinkle a clean towel with powdered sugar. Put cake on towel (nut side down ) and remove the parchment or wax paper. Roll the towel and cake together. Cool in the refrigerator.

Cream together cream cheese, powdered sugar, vanilla , and butter. Unroll the cake and spread the mixture (icing ) on the cake . Roll the cake back up. Keep refrigerated until ready to serve.

Okay, here are a couple of ideas: Turkey Pie (minus the feathers), Cranberry Cake (don't leave out the raisins) and....just kidding!! Okay seriously, do it the traditional way. Pumpkin Pie, Sweet Tator (potato) Pie---you know, stuff like that. WAIT-----was that a trick question??????

Make pumpkin bread, spice cake with frosting, and serve pies: apple, sweet potato, and maybe coconut custard.
