the claws go to canning factories for canned lobsters. The rest is boiled to make a wonderfully intense lobster stock. This is used in commercial kitchens to make lobster dishes, like bisque, etc. Trust me, nothing goes to waste.
Here in Gloucester MA, the final shells get ground up and used as garden fertilizer. The pilgrims used to harvest lobsters and use them whole in their gardens as wonderful fertilizer.

The meat is cleaned out and used and sold as lobster meat.

well they can use the claw meat and such if they have a lobster salad, or other lobster dishes, they can use the shell to make a lobster stock, the guts for flavoring certain dishes. waste not want not
