Mainly, the flavor , nutritional value and cooking properties. For me certain oils have certain applications. Some oils, like extra virgin olive oil, are only good for salads. I think that peanut oil is the tastiest for deep frying, but is very high in fat content. I usually use extra light olive oil for pan frying. It has a good combination of flavor and nutritional value. I recommend reading the information on the labels and doing trial and error to find out what you like.

a lot of things, some oils are used because of their flavors like olive oil, hazelnut oil and others. Others are used because they have a very neutral flavor like peanut or canola. Certain oils have a higher smoke point that others, which means they break down at a higher temperature making them more suitable for certain tasks
