Here are a few suggestions:
*Vacation- for 1,600 you can purchase a trip to a tourist spot in Mexico, some of those are 'all inclusive' which means it includes your drinks and food, you can sun yourself on the beach and romantic nights in the hot tub, the only money you have to spend is on extra activities or food outside the resort. A way to present this is to purchase the tickets/reservations ahead of time on Expedia or Travelocity and print the confirmation and itinerary, shove in an envelope so she thinks she's getting something lame like a gift card, she will be very surprised. If you cannot afford a vacation, try a mini-getaway like renting a room at a luxury hotel nearby, there are alot of Spa-Hotels where you can purchase a 'Couples Massage' where you two are massaged by two seperate people but in the same room, its very relaxing and a connected experience. Check in early and go out to a nearby walk or beach, have dinner at a nice resturant near by than stay in all night, order room service the next day, too sweet!
*Jewelry- What girl doesn't like jewlery. Even my friend who never wears jewlery was happy when her fiance bought her a tennis bracelet. There is the new Journey's design, or the Past-Present-Future designs, or just a heart pendant. You can go from a really nice jewlery store, down to Target to get jewlery. Just make sure you check the karots, some people are allergic to metals, to be safe stay above 24k golds only.
*And of course- what does she like? Is she a gym rat? Get her gym clothes or a gym membership. Is she a yoga freak? A new yoga mat and yogi toes inside a yoga bag is great and useful. Is she obsessed with photography? Get her the newest best digital camera (Make sure you research or ask someone who knows about photography first though!) Does she like to draw/paint/etc? Art supplies. Is she a designer freak? What girl would not want a new pair of the hottest designer jeans? Sass & Bide, True Religions and J.Brand are what the celebrities are all raving about. A signature Coach purse. Uggs to beat the winter chill.
