Peanut Butter Soup

Ingredients
1 tbsp Margarine
1/2 Onion, chopped
1/2 Green bell pepper, chopped
1 Garlic clove, chopped
1 14 oz Can tomatoes with liquid
1 14 oz Can vegetable broth + 1 can water
Sprinkle dried red chili pepper
1/4 cup Uncooked minute brown rice
1/4 cup Beanut butter
Preparation
melt margarine in large saucepan, add onion, green pepper, and garlic. stir and cook 4 minutes. add tomatoes, broth, water, and chili pepper. stir. when soup starts to boil, turn to low and cook uncovered 30 minutes. add rice, cover and cook on low 15 minutes. turn off heat, stir in peanut butter until dissolved.
Cook's Notes
You might want to remove some of the warm water from the pan and mix the peanut butter into a paste, then return to pot.

I have made something similar-
Take chicken stock and add in 3 tablespoons of peanut butter. I also add in 1/4 of peppers and a little collard greens. Cook until all the ingredients cook down to mush and you are good.
Fried tortilla chips when you are done are a great addition- cut them into strips and deep fry and add to the top. Also chow mien makes a great addition.
I really think that peanut butter is underrated as a cooking ingredient. Try it on chicken and grill it sometime...moist and Delicious.

Simplest Peanut Soup
The simplest Peanut Soup recipe calls for two parts chicken stock, two parts shelled peanuts, and one part milk or cream. Start by roasting the peanuts in a baking pan in a hot oven, or on the stove in a large skillet, turning often. Remove the skins from the peanuts and mash them with a mortar and pestle, mince them with a knife, crush them with a rolling pin, or use a food-processor. (Or you could use one part peanut butter, preferably natural and unsweetened.) Combine the peanut paste with the chicken stock in a saucepan and simmer for thirty minutes to an hour. Season with salt, black pepper, cayenne pepper, and sugar to taste. Stir in milk before serving.

It may be African, but the Thai also make it. Try this recipe:
2 tablespoons onion, minced
3 tablespoons butter
1 tablespoon flour
1 cup peanut butter
4 cups chicken broth
salt and pepper
1 cup whipping cream
Cook onion in butter until soft in 2-quart saucepan.
Add flour and cook, stirring, until smooth.
Stir in peanut butter, add chicken broth.
Season to taste with salt and pepper.
Cook, stirring, over low heat until thickened and smooth.
Add cream.
Serve...Yum
