Pistachio Pudding
2 large egg yolks
1/2 cup granulated sugar
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups milk
1 ounce pistachio paste
2 tablespoon butter, softened
1 teaspoon vanilla extract
1/2 cup finely chopped pistachio nuts
Slightly beat the egg yolks in a 2 cup measuring glass; set aside.
Combine the sugar, cornstarch and salt in a 2-quart saucepan. Gradually stir in the milk and pistachio paste. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
Gradually stir at least half of the hot mixture into the beaten egg yolks, then stir the egg mixture into the saucepan with the remaining hot mixture. Boil and stir mixture for 1 minute; remove from the heat.
Stir in the butter, vanilla and pistachio nuts. Pour into dessert dishes. Cover and refrigerate about 2 hours or until chilled.
Makes 4 servings.

you can get a box mix if you are in hurry jello makes it.
here is a recipe from scratch:
45 Ritz crackers
1 1/4 sticks butter
2 boxes pistachio pudding, instant
1 1/2 c. milk
1 qt. vanilla ice cream, softened
1 lg. Cool Whip
2-3 Butterfinger candy bars
Melt butter and crush Ritz crackers. Mix together and spread in 9 x 13 inch pan. Bake 10 minutes at 300 degrees. Mix pistachio pudding with milk until thick. Add ice cream and spread over cooled crumbs. Freeze. When solid, spread Cool Whip on top. Crush candy bars in plastic bag and spread over Cool Whip. Freeze. Thaw 10 minutes before serving.
Chocolate pudding can be substituted for pistachio

When all else fails, this has got pistachio pudding in it...
"Pistachio Cream Dessert" - 8 servings
2 tbsp. butter
3/4 cup butter-flavored cracker crumbs
3/4 cup cold milk
1 (3/4 oz.) pkg. instant pistachio pudding mix
2 cups vanilla ice cream; softened
1 (8 oz.) carton frozen whipped topping; thawed
2 (1.4 oz.) Heath candy bars; crushed
In a microwave-safe 8" square dish, melt butter. Stir in cracker crumbs; press mixture onto bottom of dish. In a bowl, whisk milk and pudding mix for 2 minutes. Whisk in the ice cream; pour over crust. Cover and freeze for 2 hours.
Spread with whipped topping; sprinkle with crushed candy bars. Freeze for 1 hour or until firm.

1 large box of pistachio pudding(instant), 1 small can crushed pineapple(drained)1 small container of cottage cheese, 1 container of coolwhip, and a hand full or so of mini marshmallow
Mix pudding as directed, only use 1 1/2 cups milk......add the rest of ingredients and chill........hope you enjoy

1 tub cool whip. 1 box Jell-o Instant pistachio pudding. I can (drained) fruit cocktail. 1 small can crushed pineapple. Stir together and let set.
