This simple five ingredient turkey and stuffing recipe that cooks in your crockpot is a good Thanksgiving dinner for a small gathering.
Crockpot Onion Turkey with Stuffing
INGREDIENTS:
* 1 Tbsp. olive oil
* 1 onion, chopped
* 2 Tbsp. apple jelly
* 6 oz. pkg. turkey flavor stuffing mix (one step brand)
* 3/4 cup water
* 2 lb. boneless, skinless turkey breast half
* salt and pepper to taste
PREPARATION:
Heat oil in large skillet. Add onion and cook for 5 minutes until light brown, stirring frequently. Add jelly and heat for 1 minute longer or until golden brown.
Spray a 4-6 quart slow cooker with nonstick cooking spray.
Place stuffing mix in prepared cooker. Drizzle with water and mix gently. Sprinkle turkey with salt and pepper and place on stuffing mix. Spoon onion mixture over turkey and spread evenly.
Cover and cook on low for 5-6 hours. Serves 5

Carrot Pineapple Salad
INGREDIENTS:
* 1 envelope unflavored gelatin
* 1/2 cup reserved pineapple juice
* 1/3 cup sugar
* 1/4 tsp. salt
* 1 cup boiling water
* 1/4 cup lemon juice
* 1/2 cup chopped pecans
* 8-oz. can crushed pineapple, well drained, reserving juice
* 2 carrots, coarsely grated
PREPARATION:
In large bowl, sprinkle gelatin over reserved pineapple juice and let stand 2-3 minutes. Then pour sugar and salt on top of gelatin. Pour boiling water over all and stir until sugar and gelatin are dissolved.Add lemon juice and stir to blend. Add pecans, pineapple, and grated carrot. Pour into 8" square glass baking dish. Cover and chill 4 hours until firm. Cut into squares to serve and top with a bit of mayonnaise. 9 servings.

Pumpkin Ice Cream
Ingredients
1 can pumpkin pie filling
1 cup heavy cream
1 1/4 cups simple syrup (1 part water to 1 part sugar)
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
Instructions
In a bowl, mix together all of the ingredients. Pour the mixture into an electric ice-cream maker. Freeze for 20 minutes, or follow the instructions for your ice cream machine.
Yield: 1 quart
So easy, yet soooooo good!
Linda's Pumpkin Trifle
Yield: 12 Servings
2 cups prepared crumbled unfrosted
-spice cake, muffins or
-gingerbread
1 can Pumpkin (16 oz)
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground allspice
2 1/2 cups cold milk
1 pkg (4 serving size) instant butterscotch pudding
2 cups whipping cream
Maraschino cherries
-(optional)
Set aside 1/4 c of cake crumbs for top. Divide remaining crumbs into four portions; sprinkle one portion into the bottom of a trifle bowl or 3 qt serving bowl. In a large mixing bowl, combine pumpkin, spices, milk and pudding mixes; mix until smooth. Spoon half into the serving bowl. Sprinkle with a second portion of crumbs.
Whip cream until stiff; spoon half into bowl. Sprinkle with a third
portion of crumbs. Top with the remaining pumpkin mixture, then last
portion of crumbs and remaining whipped cream. Sprinkle the reserved
crumbs on top, around the edge of the bowl. Place cherries in the
center, if desired. Cover and chill at least 2 hours before serving.
Yield: 12-15 servings

I don't like frozen turkeys at all. I always purchase mine a day or two before and never have not found a fresh turkey. I think you can order them too if you are pretty friendly with your local butcher he will put one aside for you. But we have a supermarket on every corner and I cannot imagine not finding a fresh turkey. More is better anyhow...we love the leftover sandwiches. Frankly there is almost never any leftovers in our household no matter how big the turkey is! I guess it depends where you are at the availability. If you got one today you'd be fine until Monday for sure.

Or you can do Green Bean Casserole...that is another group fav...
Just go buy 2 cans of Frenches French Fried Onions, 2 cans of Cream of Mushroom soup and 4 cans of String Green Beans. Add both cans of soup mix and the green beans to a bowl and mix well then add one can of onions and mix well again, poor it into a backing dish and bake at 325 for 30min and then poor the other can of Frenches onions on top of the mix and put it back in the oven for another 10 Min's.....then its all done!

Besides the usual Turkey, Stuffing, Mashed Potatoes and Gravy, Corn, Green Bean Casserole and Dinner rolls, we'll probably have these as well:
Crock pot macaroni and cheese
16 oz. box of macaroni (for 5 qt. pot)
3 large cans of evaporated milk
3 cups shredded cheese, chedder or whatever kind you like best
3 eggs
1 stick melted margerine
salt and pepper to taste
1 tablespoon sugar
Mix all together and put in crock pot. Cook on low 3 hours. Add a little extra cheese on top if you love it real cheesy.
Roasted Garlic Scallopped potatoes
1 (19 ounce) can creamy potato with roasted garlic soup
1/2 cup heavy cream
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
6 large potatoes, peeled and sliced
2 1/2 cups shredded Cheddar cheese, divided
Preheat oven to 350 degrees F (175 degrees C). In a blender combine soup, cream, thyme and pepper; process until smooth. Spread a thin layer of the mixture on the bottom of a 9x13 inch casserole dish. Layer potatoes with cheese, ending with potatoes and reserving 1/2 cup cheese. Pour soup mixture over potatoes and sprinkle with remaining cheese. Bake in preheated oven for 70 minutes.
And for dessert we'll be having pumpking pie, sweet potatoe pie, cheesecake and:
Pumpkin Log
3 eggs
2/3 cup canned pumpkin
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 cup flour
1/2 cup chopped walnuts
Preheat oven to 375 degrees. Grease and flour a jelly roll pan (10 by 15 inches). In bowl, combine all ingredients with mixer until well blended. Pour mixture in prepared pan and bake for 15 minutes. Remove from oven. Sprinkle tea towel with powdered sugar and invert baked roll onto towel, gently rolling like a jelly roll. Set aside until cool, approximately 20 minutes. Unroll log, spread with filling and carefully reroll. Refrigerate. Before serving, sprinkle with a little bit of powdered sugar.
Prepare Filling:
2 tablespoons butter, softened
1 8-ounce package of cream cheese, softened
1 teaspoon vanilla
1 cup powdered sugar
Beat ingredients until very creamy.

1 tsp. evaporated milk
1/2 tsp. prepared mustard
Paprika (optional)
Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash the yolks. Stir in mayonnaise, dip, milk and mustard; pipe or stuff into egg whites. Sprinkle with paprika, if desired. Refrigerate until serving time.
(Note: I usually sprinkle half the eggs with paprika, the other half with parsley - for those who prefer either one.)
"Herbed Deviled Eggs" - 1 dozen
6 hard-cooked eggs
2 tbsp. minced chives
2 tbsp. plain yogurt
2 tbsp. mayonnaise
1 tbsp. chopped fresh tarragon
1 tbsp. minced fresh parsley
2 1/2 tsp. prepared mustard
1 tsp. snipped fresh dill
Salt and pepper to taste
Cut eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks; stir in remaining ingredients. Pipe or stuff into egg whites. Refrigerate until serving time.

well for thanks giving of course you also need a Turkey and pumpkin pie and sweet potatoes... so hopefully you are making those too... well have fun making your thanks giving dinner...oh also make rolls .....Parker house rolls are the bomb....so ya good luck!!!!!!!!!!!!!
