Generally speaking, off season is the best time for a deal. Resorts and airline are trying to get their seats and beds full by offering great discounts as opposed to peak season. Doing a basic search online i.e.: Travelocity, Priceline, Orbitz, should yeild you good results for finding a cheat Caribbean vacation.

Probably getting a group together and renting a villa / house. condo what ever and splitting the cost, bring your own coffee and then buy your produce and fish from local vendors.
Your air fare is where the $$$ will come in. And, yes, off season it is less to rent accomodations.

Sneak aboard with the frozen foods. Then break out of the refrigerator... telll the captain that you are being hunted by space bounty hunters and ask for asylum.
