I think it depends on your religious background. Christians say Monday because Sunday is the Sabbath, and in the bible, it says that God created the world in 6 days and on the 7th He rested. That makes Sunday our Sabbath, or 7th day, so Monday is the first day of the new week. However, many faiths recognize Saturday as the Sabbath, which makes Sunday the start of the new week. A non-religious view would be that Monday is the start of the working week for most of us, so that makes it Day 1.

Sunday. But of course the normal working week in the West starts on Monday compared to Sunday in, for example, some Islamic countries..

The world was created over seven days, starting on a monday, with sunday being the sabbath day. so we start on a monday, work hard all week and rest when it comes to sunday. then just start all over again

The start of a calendar week is Sunday, however the start of the working week is Monday. In pay Terms most firms say that Saturday is the start of the Payment Week.
Does this make it as clear as mud!
