German schools usually have less choice in subject matter. They get to like choose between, say, for science: Chemistry or Biology. At least, that's how it is in the German town my friends are from. Also, the classes stay with each other throughout the day, like the people in your class and classrooms dont change, the teachers switch rooms instaed of the students.

The german school system is quiet different to the english and US ones.
In Germany the pupils are really spereated after primary school (4th grade) and short time later. You got 3 schools later: The "Gymnasium" (either 5th to 12th or 13th grade), where you will get "Abitur" that qulifies you to go to a university, the "Realschule" what is a middle school, goes up to 10th grade while the "Hauptschule" is a basic school that goes to 9th grade. There are a couple of other schools, but those 3 are the main ones.
The Gymnasium later specialises into languages, science, economy or arts.
A basic of the german school system is, that it is regulated by the states, so each state will have a different system. This was established after WWII to try to make sure that the system itself cannot be changed and ruled by a central government any more. Therefore there are some states that offer a different system, where this seperation does not take place and pupils will share classes according to their strengths. Depending on their strengths they will leave school after 9,10 or 13 years matching to the "usual" system. If you want to phrase it properly you should talk about school systems.
Not all schools end at 1 PM also end of school does not mean end of learning. Most pupils will have home work, that keeps them busy for at least 2 hours.

I once heard/read that German schools separate kids by testings they do at the end of primary school and so that determines their future paths for schooling.
Not 100% sure if it was or still is true though.
